5 small flour tortillas
1 cup canola oil, for frying
8 ounces ahi tuna, small dice
4 tablespoons chopped green onions
2 tablespoons light soy sauce
1 teaspoon grated fresh ginger
2 teaspoons fresh lemon juice
1 teaspoon sesame oil
1 teaspoon fish sauce
1 teaspoon rice wine vinegar
Salt and freshly ground black pepper
10 to 15 fresh cilantro leaves, for garnish

Steps:

  • To make the tortilla disks, take a round pastry cutter and cut out small 2-inch disks from the flour tortillas. Heat a large skillet over medium heat, add the canola oil. When the oil is hot, add the tortilla disks, turning quickly until golden brown. Remove to paper towels and allow to cool.
  • To make the tuna tartar: In a medium bowl, mix all the other ingredients together, except the cilantro, and allow to marinate 5 minutes before you serve. Place in the refrigerator until ready to serve.
  • To finish, strain the excess liquid from the tuna mixture. Place a little of the tuna mixture on top of each tortilla disk, garnish with cilantro leaves and serve on a platter.

I have never tasted another tuna salad quite like this one, and it has been my favorite recipe for tuna salad for many, many years.

1 teaspoon Dijon mustard
1/4 cup extra-virgin olive oil
Kosher salt
One 15-ounce can cannellini beans, drained and rinsed
One 6.35-ounce jar olive oil-packed tuna, drained
2 cups baby arugula
2 small treviso, cut into 2-inch pieces
1 Belgian endive, cut into 2-inch pieces
1 small bulb fennel, shaved on a mandoline or sliced thinly with a knife
1/2 cup fresh Italian parsley leaves

Steps:

  • Whisk together the lemon juice, capers and Dijon mustard in a large bowl. While continuing to whisk, drizzle in the olive oil in a steady stream. Whisk in 1/4 teaspoon salt. Add the beans to the dressing and mash gently with a spoon. Add the tuna, flaking it with a fork into bite-size pieces. Toss lightly to coat. Cook some barley one night for dinner and reserve some to make this the next day. Though this is good after a couple of hours, it's even better the next day as the dill flavor really infuses the dish and the tuna flavor mellows. (Please don't eat this right away, not very tasty.)
