SHRIMP SALAD

Using plenty of lemon - both the zest and juice - is the secret to this tangy, creamy shrimp salad. If you're using this to make sandwiches, chop the shrimp into pieces before adding them to the dressing. You can also leave the shrimp whole for an elegant salad, served with lettuce, avocado, and other vegetables if you like. If you're starting with precooked shrimp, you can skip the first step entirely.

Time 15m

Yield 2 to 4 servings

Number Of Ingredients 9

Salt and freshly ground black pepper
2 lemons
1 pound shelled large shrimp
1/4 cup mayonnaise
2 tablespoons extra-virgin olive oil
1/2 cup diced celery
1/4 cup diced red onion
1/4 cup chopped fresh dill, parsley or cilantro (or a combination)
Lettuce, avocado or other vegetables, for serving (optional)

Steps:

  • Bring a medium pot of salted water to a simmer. Slice one of the lemons and add to the pot, along with the shrimp. Simmer, never letting the water boil if you can help it, until the shrimp turn opaque, 2 to 4 minutes, depending on their size. Drain well, and discard the lemon slices. If you like, you can chop the cooked shrimp into smaller pieces.
  • Grate the zest from the remaining lemon into a large bowl. Halve the naked lemon and squeeze the juice into the bowl. Whisk in the mayonnaise and oil.
  • Add the celery, onion, herbs and cooked shrimp, tossing to combine. Season to taste with salt and pepper. Cover and refrigerate until ready to eat. Serve with lettuce and avocado, if you like.

SIMPLE SHRIMP SALAD

Simple Shrimp Salad image

This is a classic summertime dish in my family - great on hot summer days. We usually had this with sliced tomatoes (eat them raw with salt and pepper) and sliced cucumbers in vinegar with pepper. I don't use mayonnaise enough to have gotten used to fat free mayo, but if you're used to it, please feel free to substitute. I usually cook the pasta in a pot with a lid, then mix the salad in the cooking pot to save cleanup time. Cook time is just for the pasta; prep time does not include chilling.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 6

12 ounces pasta
1/2 cup onion, minced
3/4 cup celery, chopped
16 ounces shrimp, cooked,peeled,and deveined
3/4 cup mayonnaise
salt and pepper

Steps:

  • Cook pasta until al dente, then drain and cool.
  • Stir in onions, celery, and shrimp.
  • Stir in just enough mayonnaise to coat.
  • I usually use between 1/2 and 3/4 cup, but adjust to your taste.
  • Season with salt and pepper and chill overnight before serving.

Tips:

  • Keep it simple: The best shrimp salad recipes are simple and straightforward. Don't overcomplicate things with too many ingredients or complex flavors.
  • Use fresh shrimp: Fresh shrimp is essential for the best shrimp salad. If you can, buy shrimp that has been caught within the last day or two.
  • Cook the shrimp properly: Shrimp should be cooked until it is opaque and slightly firm. Do not overcook the shrimp, or it will become tough and rubbery.
  • Chill the shrimp before serving: Chilling the shrimp before serving will help to keep it firm and flavorful.
  • Experiment with different flavors: There are many different ways to flavor shrimp salad. Try adding herbs, spices, vegetables, or fruits to create a unique and delicious salad.

Conclusion:

Shrimp salad is a versatile and delicious dish that can be enjoyed for lunch, dinner, or a snack. With its simple ingredients and quick preparation time, shrimp salad is a great option for busy weeknights or casual gatherings. Whether you prefer a classic shrimp salad recipe or something more adventurous, there are many ways to enjoy this seafood salad.
