1 tablespoon olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
1 lb ground turkey
1 large egg, beaten
½ cup panko breadcrumbs
½ cup grated parmesan cheese
½ cup fresh parsley, finely chopped
1 ½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
pasta, for serving
Sauce, for serving

Steps:

  • Preheat the oven to 400˚F (200°C). Line a rimmed baking sheet with foil.
  • Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes.
  • Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Remove the pan from the heat and let the onion mixture cool to room temperature.
  • In a large bowl, combine the ground turkey, egg, panko, Parmesan, parsley, salt, pepper, and onion mixture. Use your hands to mix until just combined.
  • Shape the turkey mixture into 1½-inch balls (you should have about 14). Place on the prepared baking sheet, spacing 2 inches apart.
  • Bake the meatballs until browned and cooked through, 20-25 minutes.
  • Serve with pasta and sauce of your choice.

The recipe is just my basic recipe for meatballs. You can add in red pepper flakes if you like spicier meat balls. You can even change it up by changing the herbs you use. Once the meatballs are cook you can combine them in any way you want. They make excellent meatball subs also. If you choose to use fresh herbs be sure to double the amount I used in dried.

3 slices bread, crumbled into small pieces
1/2 cup milk
1/2 cup parmesan cheese, grated
1 egg, lightly beaten
1 onion, small (or half large,)
2 garlic cloves, minced
1 teaspoon dried basil
1 teaspoon dried parsley
1 lb ground meat (I use ground beef)
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat the oven to 400 degrees. Mix all the ingredients in a bowl by hand.
  • Spray a cookie sheet with nonstick cooking spray or oil. Form the meat into golf ball sized balls. Place on the prepared sheet.
  • Cook for 20-25 minutes. Serve as desired.

1 cup unseasoned breadcrumbs
3/4 cup parmesan cheese, finely grated
1/2 cup milk
1/2 cup beef broth
1/2 cup chopped fresh parsley
3 eggs, beaten
2 tablespoons dried oregano
1 tablespoon garlic, minced
1 tablespoon kosher salt
1 tablespoon ground black pepper
2 teaspoons dried basil
2 lbs ground chuck
1 cup beef broth, for baking

Steps:

  • Preheat oven to 450°F.
  • Stir together all ingredients (except the ground meat & 1 cup of beef broth for baking) in a large mixing bowl.
  • Add the ground chuck and mix together thoroughly.
  • Coat a baking sheet with nonstick spray.
  • Shape the meat mixture into balls about 2" in diameter and place on baking sheet spaced so as they aren't touching.
  • Cover bottom of baking sheet with the 1 cup of beef broth.
  • Bake for 25 minutes or until the meatballs are just cooked through.
  • Reserve pan juices for your favorite sauce.

1 1/2 lbs lean ground sirloin
1 whole egg
2/3 cup plain breadcrumbs, approx
1/4 cup milk
salt and pepper
3 -5 dashes Worcestershire sauce

  • Mix the sirloin, egg, milk, salt/pepper, and the Worcestershire sauce.
  • Add as much of the bread crumbs as you need (mixture should be slightly moist).
  • Roll into desired sized balls.
  • Preheat oven to 375°F.
  • Place onto a cookie sheet or 13x9 baking dish.
  • Bake meatballs for 15-23 minutes or until no pink remains.
  • Drain onto paper towels.
