Pepper-jack Meatloaf image

I had some leftover Pepper-Jack cheese from a picnic which we didn't use. My family will not eat this cheese on sandwiches or burger so I thought I'd try making a meat loaf with it. Oh my this was a good combination of ingredients!

Time 1h30m

Number Of Ingredients 14

2 lb 90% lean ground beef
1 tsp salt
1/8 tsp pepper
1/2 Tbsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried mexican oregano.
1/2 tsp paprika
1/2 tsp ground cumin
1/2 c plain dry bread crumbs
1/4 c rolled oats
1 small onion, grated
2 eggs, lightly beaten
5 slice pepper jack cheese

  • 1. Preheat oven to 350°F.
  • 2. In large bowl, thoroughly combine all ingredients except cheese slices.
  • 3. Spray a 2-1/2-Quart Oval Casserole Dish or large loaf pan lightly with cooking spray. Turn meat mixture into casserole and mold into a loaf shape.

This meatloaf was really bland. I was disappointed because I love pepper jack cheese. I think I'll try a different recipe next time.

This meatloaf was a little dry, but the flavor was good. I think I would add some more moisture to it next time, maybe with some extra Worcestershire sauce or ketchup.

I'm not a big fan of meatloaf, but this recipe changed my mind! The pepper jack cheese and the spices gave it a really great flavor. I'll definitely be making this again.
