1 beaten egg
1 cup milk
0.25 cup cooking oil
0.75 cup chopped almonds, pecans, or walnuts, toasted

Steps:

  • Grease the bottom and 1/2 inch up sides of an 8x4x2-inch loaf pan; set aside. In a large bowl stir together flour, sugar, baking powder and salt. Make a well in center of flour mixture; set aside.
  • In a medium bowl combine the egg, milk, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in nuts. Spoon batter into prepared pan.
  • Bake in a 350 degree F oven 50 to 55 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on wire rack. Wrap and store overnight before slicing. Makes 1 loaf (14 servings).

⅓ cup white sugar
3 eggs
½ cup vegetable oil
½ cup milk
1 teaspoon lemon zest
2 ¼ cups all-purpose flour
⅓ cup white sugar
⅓ cup packed brown sugar
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
  • Beat cheese, 1/3 cup sugar, and 1 egg together well. Set aside.
  • Beat remaining 2 eggs in mixing bowl until frothy. Mix in oil, milk, and lemon rind.

2 eggs
2 tablespoons cooking oil
1 teaspoon vanilla extract
4 cups all-purpose flour
2 teaspoons baking soda

1 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pas.

2 1/2 cups all-purpose* flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
3 tablespoons vegetable oil
1 1/4 cups milk
1 egg
1 tablespoon orange peel, plus 1 teaspoon grated orange peel (grated)
1 cup chopped nuts (pecan, walnut)

Steps:

  • Heat oven to 350°.
  • Grease bottom only of loaf pan, 9x5x3 inches, or 2 loaf pans, 8½x4½x2 ½ inches.
  • Mix all ingredients; beat 30 seconds.
  • Pour into pan(s).
  • Bake until wooden pick inserted in center comes out clean, 9-inch loaf 55 to 65 minutes, 8-inch loaves 55-60 minutes; cool slightly.
