BASIL PESTO HUMMUS
This basil pesto hummus is a deliciously creamy hummus made with chickpeas, basil, and pine nuts! Try this as a dip for your favorite vegetables, or spread it on a sandwich or pita!

Steps:
- Drain the chickpeas but reserve 1/4 cup liquid from the can
- Transfer the chickpeas to a microwave safe dish, and warm them in the microwave for 30 seconds.
- Put the chickpeas, liquid, basil, olive oil, garlic cloves, pine nuts, and balsamic vinegar into a food processor.
- Blend until smooth then add salt to taste.
- Just before serving, you can drizze add a little olive oil or basil on top.

Steps:
- Place first 7 ingredients into food processor and blend until smooth, adding olive oil and/or liquid from the chickpeas to obtain desired consistency, about 2 to 3 minutes, scraping sides occasionally.
- Add fresh basil leaves and blend until they are incorporated well, about 2 minutes, adding liquid as needed.
- Store covered in the refrigerator. The longer this sits the more the flavors blend.

- Add beans and salt and process again. Taste and adjust the amount of salt.

Steps:
- Pour the rinsed chickpeas onto half the area of a kitchen towel. Fold the other half of the towel on top of the beans, and rub them so that the skins start to come off.
- Place all of the peeled beans in the bowl of a food processor, along with the salt, cumin, garlic, and pesto. Turn the processor on to break up the mixture.
- With the food processor running, pour in the lemon juice and water, and let the processor run until the mixture is smooth.
- Serve with your choice of dipping chips or veggies.
