This basil pesto hummus is a deliciously creamy hummus made with chickpeas, basil, and pine nuts! Try this as a dip for your favorite vegetables, or spread it on a sandwich or pita!

1 15oz can chickpeas, drained, reserving 1/4 cup of the liquid from the can
1/2 cup fresh basil leaves, loosely packed
2 tablespoon olive oil
2 cloves garlic, peeled
1/2 teaspoon balsamic vinegar
1 tablespoon pine nuts
1/4 teaspoon salt (or to taste depending on the saltiness of your chickpeas)

Steps:

  • Drain the chickpeas but reserve 1/4 cup liquid from the can
  • Transfer the chickpeas to a microwave safe dish, and warm them in the microwave for 30 seconds.
  • Put the chickpeas, liquid, basil, olive oil, garlic cloves, pine nuts, and balsamic vinegar into a food processor.
  • Blend until smooth then add salt to taste.
  • Just before serving, you can drizze add a little olive oil or basil on top.

2 cups chickpeas, drained, liquid reserved
2 teaspoons minced garlic
2 teaspoons tahini paste
2 teaspoons lemon juice
1 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons pesto sauce
20 large fresh basil leaves, roughly chopped (adjust to taste)
2 -3 tablespoons extra virgin olive oil
liquid, from chickpeas

Steps:

  • Place first 7 ingredients into food processor and blend until smooth, adding olive oil and/or liquid from the chickpeas to obtain desired consistency, about 2 to 3 minutes, scraping sides occasionally.
  • Add fresh basil leaves and blend until they are incorporated well, about 2 minutes, adding liquid as needed.
  • Store covered in the refrigerator. The longer this sits the more the flavors blend.

2 garlic cloves
4 tablespoons extra virgin olive oil
4 tablespoons tahini

15 oz garbanzo beans, 1 can, drained and rinsed
¼ teaspoon salt
1 clove garlic
½ teaspoon ground cumin
½ cup basil pesto
1 tablespoon lemon juice
2 tablespoons water

Steps:

  • Pour the rinsed chickpeas onto half the area of a kitchen towel. Fold the other half of the towel on top of the beans, and rub them so that the skins start to come off.
  • Place all of the peeled beans in the bowl of a food processor, along with the salt, cumin, garlic, and pesto. Turn the processor on to break up the mixture.
  • With the food processor running, pour in the lemon juice and water, and let the processor run until the mixture is smooth.
  • Serve with your choice of dipping chips or veggies.
