This is a staple of Thai cooking. Adjust the spices to your own tastes for a really great use for leftover rice!! I get the basil from a local Asian market. It has a different flavor than that of regular basil and makes all the difference in this recipe. It is fast and fairly easy to make, but requires constant stirring.

Tips:

  • Chop the vegetables and chicken evenly: This will ensure that they cook evenly and have a uniform texture.
  • Use a large wok or skillet: A large cooking surface will help to prevent the rice from sticking and burning.
  • Cook the rice in batches: If you are using a small wok or skillet, cook the rice in batches to avoid overcrowding and ensure that it cooks evenly.
  • Add the sauce gradually: Start with a small amount of sauce and add more to taste. This will help to prevent the rice from becoming too salty or overpowering.
