BASIL CREAM SAUCE

Basil Cream Sauce image

After a mad search on the net for a recipe for this sauce I had to create my own. This can be reheated in the microwave without the usual cream sauce defects. I just love the light green color and how well it displays over tri color or regular pasta, salmon and grilled chicken. I have been putting this on everything.

BASIL LEMON BUTTER CREAM SAUCE

Basil Lemon Butter Cream Sauce image

This is a sauce recipe that was a frequent complement to chicken and fish during my study abroad residence experience with a french family in the Loire Valley region. Cream sauces are very popular paired with white and rosé wines in this geography, and this goes well over a thinly sliced breast of chicken, or a flaky whitefish. Although the sauce itself is somewhat fattening, if used conservatively it's actually a light and refreshing compliment to poultry and fish in the summer. If you absolutely feel the need to tone down the fat, be careful as you don't want the sauce to become too thin as it won't coat as nicely. Enjoy!

Tips:

  • Fresh ingredients: Use fresh basil and lemons for the best flavor. If you don't have fresh basil, you can use 1 tablespoon of dried basil, but the flavor will be less intense.
  • Unsalted butter: Using unsalted butter allows you to control the amount of salt in the sauce. If you use salted butter, taste the sauce before adding any additional salt.
  • Heavy cream: Heavy cream gives the sauce a rich and creamy texture. If you don't have heavy cream, you can substitute milk or half-and-half, but the sauce will be thinner.
  • Lemon juice: Lemon juice adds a bright and tangy flavor to the sauce. Use fresh lemon juice for the best flavor. If you don't have fresh lemon juice, you can use bottled lemon juice, but the flavor will be less intense.
  • Garlic: Garlic adds a savory flavor to the sauce. Use fresh garlic for the best flavor. If you don't have fresh garlic, you can use garlic powder, but the flavor will be less intense.
  • Salt and pepper: Season the sauce with salt and pepper to taste. Be careful not to over-season the sauce, as the lemon juice and Parmesan cheese can also be salty.

Conclusion:

Basil lemon butter cream sauce is a delicious and versatile sauce that can be used on a variety of dishes, including chicken, fish, pasta, and vegetables. It is easy to make and can be ready in just a few minutes. The combination of basil, lemon, and butter creates a rich and flavorful sauce that is sure to please everyone at the table.
