Time 10m

Yield 3/4 cup

Number Of Ingredients 6

1 cup tightly packed fresh basil or 1 cup cilantro leaf
1 cup tightly packed fresh parsley leaves
1 -2 garlic clove
1/2 cup olive oil or 1/2 cup vegetable oil
1/2 cup grated parmesan cheese
1/4 teaspoon salt

Steps:

  • Combine all ingredients in a food processor; cover and puree until smooth.
  • Toss with hot cooked pasta or vegetables, spread on French bread or use in any recipe calling for pesto.
  • Can be refrigerated for several weeks or frozen in a tightly covered container. Yield: 3/4 cup.

Tips:

  • Choose fresh, fragrant herbs: The quality of your pesto depends on the quality of your herbs. Look for herbs that are brightly colored and have a strong, aromatic smell.
  • Use a variety of herbs: Don't be afraid to experiment with different types of herbs in your pesto. Some popular variations include cilantro pesto, arugula pesto, and mint pesto.
  • Toast your nuts: Toasting your nuts before adding them to the pesto will help to bring out their flavor and make them more fragrant.
  • Use a good quality olive oil: The olive oil you use in your pesto will have a big impact on the flavor. Choose a high-quality extra virgin olive oil that has a fruity, peppery flavor.
  • Don't over-process your pesto: Pesto should be chunky, not smooth. Over-processing will make it lose its vibrant color and flavor.

Conclusion:

Pesto is a versatile sauce that can be used in a variety of dishes. It can be used as a pasta sauce, a marinade, a dipping sauce, or even a spread for sandwiches. With its fresh, herbaceous flavor, pesto is a great way to add a pop of flavor to any dish.
