Categories     Salad     Chicken

Yield 3 servings

Number Of Ingredients 11

1/2 c. mayonnaise
2 T. lemon juice
1 T. Dijon mustard
1/2 t. lemon pepper-seasoning
1/4 t. hot sauce
3 c. chopped cooked chicken
1/2 c. chopped celery
1/4 c. shredded fresh basil
2 green onions, chopped
6 c. torn or shredded fresh spinach
2 T. pine nuts or pecan pieces, toasted

Steps:

  • Combine first 5 ingredients, stirring well. Add chicken and next 3 ingredients, and toss gently. Place spinach on individual serving plates; top with chicken mixture. Sprinkle with nuts.

Tips:

  • For the best flavor, use fresh basil leaves. If you don't have fresh basil, you can use 1 tablespoon of dried basil, but the flavor will be less intense.
  • You can use any type of cooked chicken for this salad. Leftover roasted or grilled chicken works well, or you can boil or poach chicken breasts specifically for the salad.
  • If you don't have mayonnaise, you can use Greek yogurt or sour cream instead. However, the salad will be less creamy.
  • To make the salad more flavorful, add some chopped celery, carrots, or red onion.
  • For a lighter salad, use a light mayonnaise or yogurt and omit the cheese.
  • Serve the salad on a bed of lettuce or spinach for a complete meal.

Conclusion:

Basil scented chicken salad is a delicious and easy-to-make salad that is perfect for lunch or dinner. It is also a great way to use up leftover chicken. With its combination of fresh basil, creamy mayonnaise, and tender chicken, this salad is sure to please everyone at your table.
