A hearty way to start the day! This recipe is so simple and you probably have the ingredients already in the fridge. We tried this will little smokies, but can't wait to try other types of sausage. Each would add a slightly different flavor that I think would be fabulous. Make sure to let the potatoes get on the crunchy side......

2 c frozen cubed hash brown potatoes
2 Tbsp oil
1/4 c chopped onion
1/4 c chopped bell pepper (any color)
10 little smokies sausages (or any other sausage you'd like)
4 eggs

Steps:

  • 1. Fry hash browns in oil in a large skillet until they start to get soft.
  • 2. Add onion, bell pepper and cook a while longer until potatoes begin to brown.
  • 3. Slice the little smokies into small pieces and add to the skillet. When potatoes are browned, crack the eggs into the skillet. Stir mixture until eggs are cooked.

Great hearty rib-sticking meal for breakfast, lunch or supper! Very popular in my household. This is a versatile one-pan recipe-- you can sub or add ingredients as desired-- try ham, mushrooms, tomatoes, or chives. (Note: For an equally delicious simplified version of Bauernfruhstuck using frozen Potatoes O'Brien, please see my recipe #278230). Delicious! P.S. Any leftovers you have make a wonderful breakfast the next day--reheat a few seconds in the microwave (although I've been known to eat this cold), and serve with toast or stuff into a flour tortilla for a quick breakfast on-the-go.

6 slices bacon, diced
3 large potatoes, cooked and cubed (slightly undercooked)
1 small green pepper, diced
2 tablespoons onions, chopped
salt and pepper (to taste)
1/2 cup cheddar cheese, shredded (optional)
6 eggs
1/4 cup milk

Steps:

  • In a skillet over low heat, cook bacon until crisp. Remove to paper towel. Reserve 2 tablespoons drippings; add potatoes, green pepper, onion, salt and pepper. Cook and stir over medium heat until the potatoes are golden brown.
  • Stir in eggs and milk, and cook and stir until eggs are almost set, about 2 minutes.
  • Reduce heat to low. Add cheese and bacon, stirring gently until heated through and eggs are set.
  • Serve immediately.
  • Leftovers are tasty the following day. Good wrapped in a flour tortilla for a breakfast burrito, breakfast on the go.
  • Serves 4 to 6.

Here's a quick and simplified version of my Hearty German Farmer's Breakfast - Bauernfruhstuck recipe #120363, and just as delicious! Uses pre-cut frozen potatoes (I use the Ore Ida brand Potatoes O'Brien), onions, bell peppers, and precooked sausage, ham or bacon. Leftovers (if any) are awesome, and may be eaten either warm or cold. Makes a great breakfast wrap, too. Serve with some fresh fruit and your favorite beverage for a delicious breakfast, lunch or supper.

6 tablespoons olive oil
1 (24 ounce) bag o'brien frozen potatoes
4 -6 tablespoons chopped onions (fresh or frozen)
1 medium green bell pepper, roughly chopped (fresh or frozen)
2 tablespoons butter
4 sausage patties, pre-cooked and roughly chopped (I use Jimmy Dean, or may use ham or bacon)
4 -6 tablespoons chopped fresh tomatoes (optional)
6 eggs
2 tablespoons milk (or water)
salt and pepper, to taste
1 1/2 cups shredded cheddar cheese
snipped chives (optional)

Steps:

  • Heat skillet on medium heat with the olive oil.
  • Add frozen potatoes in a single layer. Cook 6 minutes, turn, and continue cooking another 6 minutes.
  • Reduce heat to medium-low. Stir in the chopped onions, bell peppers, and the butter. Cook for 8-10 minutes, stirring often and scraping the bottom of the pan, until onions are softened and peppers are almost done.
  • Reduce heat to low; stir in the chopped sausage (or ham or bacon), and the tomatoes, if using.
  • In a small bowl whisk eggs, milk, and the salt & pepper together. Add the chives, if using.
  • Pour egg mixture over potatoes, stirring to incorporate. Cook for a few minutes more, stirring occasionally, until eggs are done.
  • Sprinkle with cheese and snipped chives.
  • Serve with fresh fruit and your favorite beverage.
