BARBECUE RIBS

This recipe is easier than it sounds. I usually cook the ribs the day before and grill them for a quick dinner the next night. FYI: the sauce is much better after it is cooked. It is not a dipping sauce.

EJ'S SIMPLE OVEN-BBQ RIBS

EJ'S Simple Oven-BBQ Ribs image

Provided by Emeril Lagasse

Categories     main-dish

Time 3h25m

Yield 2 to 4 servings

Number Of Ingredients 6

2 racks baby back ribs
6 tablespoons Emeril's Rib Rub spice blend
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
1 teaspoon celery salt
Emeril's Sweet Original Bam BQ Barbecue Sauce, or your favorite barbecue sauce

Steps:

  • Preheat the oven to 300 degrees F. Line a large baking sheet with a piece of aluminum foil that is large enough to cover the pan twice (you will be folding this over the ribs and sealing it).
  • Arrange the ribs, meat side up, in one layer on the prepared baking sheet. In a small bowl, combine the Rib Rub, salt, pepper, and celery salt, and stir to combine. Divide the seasoning evenly between the 2 slabs of ribs, coating them well on both sides. Fold the extra length of foil over the ribs, and seal it tightly on all sides. Place the baking sheet in the oven and bake, undisturbed, for 2 1/2 to 3 hours, or until the ribs are very tender.
  • Preheat a grill to medium-high (or leave the oven on).
  • Remove the baking sheet from the oven and peel back the foil so that the ribs are exposed. Using a basting brush or the back of a spoon, coat the meaty side of the rubs lightly with barbecue sauce. Place the slabs of ribs, meaty side up, on the grill and cook until the barbecue sauce is thickened and lightly browned, 5 to 10 minutes. (Alternatively, return the baking sheet to the oven and continue to bake the ribs, without the foil covering, until the barbecue sauce is thickened and lightly browned, 20 to 30 minutes.)
  • Plating / Assembly: Remove the ribs from the grill (or oven), and let them cool briefly. Then cut between the ribs and serve, with additional barbecue sauce on the side if desired.

STU'S BAKED BBQ RIBS

Stu's Baked BBQ Ribs image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 3h20m

Yield 4 to 8 servings

Number Of Ingredients 9

1/4 cup packed brown sugar
1/4 cup smoked paprika
1 mounded tablespoon ground black pepper
1 mounded tablespoon garlic powder
1 mounded tablespoon onion powder
Kosher salt
2 racks spareribs
1/3 cup yellow mustard
1 cup BBQ sauce

Steps:

  • Preheat the oven to 250 degrees F. Line a sheet pan with foil.
  • In a small bowl, mix together the brown sugar, paprika, black pepper, garlic powder, onion powder and 1 teaspoon salt.
  • Lay the ribs onto the prepared sheet pan and season on both sides with salt. With the meat side of the ribs face down, brush with half of the mustard and sprinkle over half of the seasoning mix. Turn the ribs over, so the meat side now faces up, and use the remaining mustard and seasoning mix on the other side. Bake the ribs meat-side up until they are very tender, 2 to 2 1/2 hours.
  • Remove from the oven and spread the ribs with half of the BBQ sauce. Return the sheet pan to the oven for another 30 minutes, allowing the sauce on top to become sticky and delicious.
  • Transfer the ribs to a cutting board and allow them to rest for a few minutes before slicing into individual ribs. Serve with the remaining BBQ sauce on the side.

Tips:

  • Choose the right ribs: Baby back ribs are the most popular choice for BBQ ribs, but you can also use spare ribs or St. Louis-style ribs. Spare ribs are meatier and have a more pronounced flavor, while St. Louis-style ribs are trimmed of the rib tips and have a more uniform shape.
  • Prepare the ribs: Remove the membrane from the back of the ribs to help the rub and sauce penetrate the meat. You can also trim the excess fat from the ribs, but don't remove it all, as it helps to keep the ribs moist during cooking.
  • Use a good rub: A rub is a mixture of spices and herbs that is applied to the ribs before cooking. There are many different rub recipes available, so feel free to experiment until you find one that you like. Some popular ingredients in rubs include brown sugar, paprika, chili powder, garlic powder, and onion powder.
  • Cook the ribs slowly and low: The best way to cook ribs is to cook them slowly and low over indirect heat. This allows the ribs to cook evenly and develop a tender, fall-off-the-bone texture. The ideal cooking temperature is between 225°F and 250°F.
  • Baste the ribs: Basting the ribs with a mixture of BBQ sauce, apple cider vinegar, and Worcestershire sauce helps to keep them moist and flavorful. Baste the ribs every 30 minutes or so during the last hour of cooking.
  • Let the ribs rest: Once the ribs are cooked, let them rest for at least 10 minutes before serving. This allows the juices to redistribute throughout the meat, resulting in more tender and flavorful ribs.

Conclusion:

BB King's ribs are a delicious and easy-to-make dish that is perfect for any occasion. With a few simple ingredients and a little patience, you can create fall-off-the-bone ribs that will impress your friends and family. So fire up your grill and get cooking!
