Number Of Ingredients 24

1 tablespoon chile flakes
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon packed light brown sugar
Kosher salt and freshly ground black pepper
One 3-pound brisket
2 tablespoons olive oil
2 cups Nancy's Sweet and Tangy BBQ Sauce, recipe follows
1 tablespoon Worcestershire sauce
One 12-ounce bottle lager beer or chicken broth
6 ciabatta sandwich rolls
Mayonnaise, for serving
2 tablespoons butter
1/2 medium red onion, chopped
3 cloves garlic, minced
2 cups tomato sauce
1 cup ketchup
1/2 cup packed light brown sugar
1/4 cup white wine vinegar
2 teaspoons dry mustard powder
1/2 teaspoon cayenne pepper, plus more if needed
Kosher salt

Steps:

  • In a medium bowl, stir to combine the chile flakes, chili powder, garlic powder, onion powder, paprika, brown sugar and some salt and pepper. Rub the spice mix on the brisket to coat. Place in a large resealable bag or dish and refrigerate for at least 1 hour or up to overnight.
  • Preheat the oven to 325 degrees F and position a rack in the center of the oven.
  • Heat the olive oil in a large Dutch oven set over medium heat. Sear the brisket, fat-side down, until caramelized and browned, 6 to 8 minutes, then flip and cook another 5 minutes.

Slice the brisket thinly against the grain, then return the meat to the Dutch oven and coat in the sauce. Pile the meat onto the sandwich rolls, spread some mayo on one side of the roll and then drizzle some extra sauce over the meat to serve.
  • In a medium saucepan, heat the butter over medium heat. Add the onions and cook until soft and translucent, 4 to 5 minutes. Stir in the garlic and cook 1 minute, then whisk in the tomato sauce, ketchup, sugar, vinegar, mustard, cayenne and some salt. Bring to a boil, then reduce to a simmer and cook for 45 minutes.

Tips:

  • Choose the right cut of beef: Brisket is the traditional cut for barbecue sandwiches, but you can also use chuck roast or shoulder clod. Look for a brisket that is well-marbled with fat, as this will help keep the meat moist during cooking.
  • Prepare the brisket properly: Before cooking, trim off any excess fat from the brisket and season it generously with a rub made from your favorite spices. You can also inject the brisket with a flavorful solution to help keep it moist.
  • Cook the brisket slowly and low: Brisket is a tough cut of meat, so it needs to be cooked slowly and low in order to break down the connective tissue and make it tender. The ideal cooking temperature for brisket is between 225 and 250 degrees Fahrenheit, and it should cook for at least 8 hours.
  • Let the brisket rest before slicing: Once the brisket is cooked, let it rest for at least 30 minutes before slicing. This will allow the juices to redistribute throughout the meat, making it more tender and flavorful.
  • Use a sharp knife to slice the brisket: A sharp knife will help you get clean, even slices of brisket. Slice the brisket against the grain to make it more tender.
  • Serve the brisket sandwiches with your favorite toppings: Classic toppings for brisket sandwiches include barbecue sauce, coleslaw, and pickles. You can also get creative and add your own favorite toppings, such as grilled onions, peppers, or avocado.

Conclusion:

Brisket sandwiches are a delicious and satisfying meal that is perfect for any occasion. By following these tips, you can make the best brisket sandwiches that will have your friends and family begging for more.
