This casserole is the very first dish which I concocted. I threw this together many years back with my boys in mind. I used ingredients which I knew they would like, but made it healthy to satisfy me. They loved it, as did my husband, and they still request it today. It's great with Italian or French bread!

1 (12 ounce) box tri-color spiral pasta
1 cup honey barbecue sauce
1 (14 ounce) can low sodium chicken broth
1 (14 1/2 ounce) can French style green beans, drained and rinsed
1 1/2 lbs boneless skinless chicken breasts
1 1/2 cups shredded mozzarella cheese
1 teaspoon garlic powder or 1 teaspoon minced garlic

Steps:

  • Pre-heat oven to 350 degrees.
  • Cook the chicken breasts in a lightly oiled skillet on medium heat for approximately 6-8 minutes on each side or until chicken is no longer pink inside; cool for 5 minutes; then dice.
  • At the same time, cook the pasta according to box directions. When done, drain the pasta and place in a large, greased baking dish. Add the chicken and remaining ingredients to the pasta. Mix well.
  • Cover and bake for 45 minutes. Stir and enjoy!

1 lb chicken tenders or breast, cut into 1" cubes
3 Tbsp bbq seasoning, divided
1/2 c bbq sauce
3 large russett potatoes cut into small chuncks
1/2 c cooked bacon, crumbled
1 c shredded cheddar cheese
1 Tbsp olive oil
2 green onions, chopped

Steps:

  • 1. Preheat oven to 475 degrees. Toss the cubed potatoes with extra virgin olive oil, 1 tbsp bbq seasoning. Transfer the potatoes into a cooking spray coated baking dish. Bake the potatoes for 35-40 minutes, stirring every 10-15 minutes, until cooked through and crispy and browned on the outside.
  • 2. While the potatoes are cooking, in a large bowl mix together the chicken, bbq seasoning and bbq sauce, refrigerate. Once the potatoes are fully cooked, remove from the oven and lower the oven temperature to 400 F.
  • 3. Top the cooked potatoes with the bbq chicken mixture. Bake for an additional 25 minutes, turning occasionally. In another bowl mix together the cheese, bacon & green onion and top the chicken with the cheese mix. Return the casserole to the oven and bake for 5-10 minutes until cheese mixture is melted

I decided to experiment one day, and actually write down what I did and how I did it. This is the result. My friends loved it, and my mother (Kayne) did too. She talked me into posting it.

4 cups cooked rice
1 red onion, chopped
1 red bell pepper, chopped
2 garlic cloves, crushed
1 whole store bought rotisserie-cooked chicken
2 cups barbecue sauce, divided
2 teaspoons barbecue seasoning
8 ounces beer
2 (10 ounce) cans Pillsbury Grands refrigerated buttermilk biscuits
3 cups finely shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Cook the rice according to instructions.
  • In a large skillet sautee onion, pepper, and garlic over low heat.
  • Add the shredded chicken to the skillet.
  • Add 1 1/2 cups of the BBQ sauce and the BBQ seasoning.
  • Bring to a slow boil, add the beer and simmer for about 35 minutes or until mixture is thick.
  • Place the cooked rice in the bottom of a greased casserole dish, spread the chicken mixture on top of the rice, and pour 1/2 cup of BBQ sauce on top. Add cheese, then top with biscuits.
  • Bake until biscuits are golden brown, about 15 minutes.

3 cups of cooked, shredded chicken
Bar-b-que sauce {Make sure your favorite doesn't contain High Fructose Corn Syrup}
1 bag of Tater Tots
1 cup {4 oz} of shredded cheddar cheese {preferably organic or raw - I buy in a block and shred myself}

Steps:

  • This "recipe" couldn't be easier. Preheat your oven to 350 degrees. Toss your chicken in a 9×11 baking dish. Pour in some bar-b-que sauce and stir it around. Add more if you need to until the chicken is good and coated. Spread the chicken out so that it covers the bottom of the dish. Top the bar-b-que chicken with tater tots. Top the tater tots with cheddar cheese. Pop it in the oven and bake for about 30 minutes, or until the tater tots are browned and cooked through.

1/2 pound uncooked farfalle
1/2 cup chopped red onion
1/2 cup KC Masterpiece BBQ Sauce
8 ounces tomato sauce

  • Preheat oven to 350 degrees Cook pasta until done. Drain. Grill chicken on stove or on grill. Cut strips into bit size pieces once cooked.
