Steps:
- Make the chicken: Combine the brown sugar, chili powder, paprika and cumin in a small bowl. Season the chicken all over with 1 tablespoon salt and 1 teaspoon pepper, then rub all over with the spice mixture. Cover and refrigerate 1 to 2 hours.
- Meanwhile, make the barbecue sauce: Whisk the ketchup, vinegar, brown sugar, orange juice, garlic, molasses, hoisin sauce, mustard and chili powder in a small saucepan until smooth. Bring to a boil, then reduce the heat to a simmer and cook until slightly thickened, 10 to 15 minutes. (You should have 1 1/4 to 1 1/2 cups sauce.)
- Remove the chicken from the refrigerator 30 minutes before grilling. Preheat a grill to medium and oil the grates. Grill the chicken, covered and turning occasionally, until lightly charred and a thermometer inserted into a drumstick (without touching the bone) registers 170 degrees F, 35 to 45 minutes, brushing with some of the barbecue sauce during the last 10 minutes of cooking. Transfer to a platter and brush with more barbecue sauce. Serve with the remaining sauce.

Steps:
- Heat oven to 180C/160C fan/gas 4. Put the chicken in a roasting tin, season well and cook for 40 mins or until cooked through. Either carry on with the recipe or cool and chill. This step can be done up to two days ahead.
- Put the sauce ingredients in a pan and bring to a simmer, then keep cooking until it thickens a little and looks shiny. Use straight away or cool and chill. The sauce will keep for a week in the fridge.
- Heat a barbecue until the coals are glowing white hot. Brush the chicken pieces all over with the sauce and barbecue them on each side until they are browned and sticky, then brush once more with the sauce. Don't worry about cooking them through, as they are already cooked. If you want to cook them indoors, coat them in the sauce and grill on a medium heat on all sides.

Tips and Conclusion
For mouthwatering BBQ chicken on a stick, here are some expert tips to follow:- Marinate your chicken: Marinating the chicken in a flavorful mixture of herbs, spices, and liquids tenderizes the meat and infuses it with delicious flavors. Yogurt, buttermilk, and olive oil are excellent marinade bases to consider.
- Choose the right skewers: Opt for sturdy skewers that can withstand the heat of the grill without burning. Wooden skewers need to be soaked in water for at least 30 minutes before use to prevent burning.
- Skewer the chicken evenly: Ensure the chicken pieces are evenly distributed on the skewers to promote even cooking. Avoid overcrowding the skewers, as this can hinder proper grilling.
- Grill at the right temperature: Maintain a medium-high heat on your grill, around 375-400°F (190-204°C). This temperature will help achieve a perfectly cooked chicken without burning it.
- Baste the chicken: Basting the chicken with the reserved marinade or a flavorful sauce during grilling keeps it moist and enhances the taste. Brush the chicken with the basting liquid every few minutes.
- Cook to the right internal temperature: Use a meat thermometer to ensure the chicken is cooked to a safe internal temperature of 165°F (74°C). This will guarantee that the chicken is cooked thoroughly without overcooking.
- Let the chicken rest: After grilling, allow the chicken to rest for a few minutes before serving. This helps the juices redistribute throughout the meat, resulting in a more tender and flavorful experience.
Conclusion
BBQ chicken on a stick is a versatile and delectable dish that can be enjoyed at backyard barbecues, picnics, or as a fun appetizer. With careful preparation, the right grilling techniques, and attention to detail, you can create tender, juicy, and flavorful chicken skewers that will tantalize your taste buds. Experiment with different marinade recipes, grilling methods, and flavorful sauces to find your favorite combination. So, fire up your grill, gather your friends and family, and indulge in the smoky, savory goodness of BBQ chicken on a stick.
