2/3 cup barbecue sauce
1/3 cup salsa
2 teaspoons Worcestershire sauce
1 cup dry bread crumbs
1 small onion, finely chopped
1 small green pepper, finely chopped
1 large egg, lightly beaten
2 tablespoons Montreal steak seasoning
1-1/2 pounds lean ground beef (90% lean)

Steps:

  • Preheat oven to 400°. In a large bowl, mix barbecue sauce, salsa and Worcestershire sauce; reserve 1/2 cup mixture for topping. Add bread crumbs, onion, pepper, egg and steak seasoning to remaining sauce mixture. Add beef; mix lightly but thoroughly., Place 1/3 cup beef mixture in each of 12 greased muffin cups. Spoon reserved sauce mixture over tops., Bake 20-25 minutes or until a thermometer reads 160°. Let stand 5 minutes before removing from pan.

1 1/2 pounds lean ground beef ((or ground turkey))
2/3 cup panko bread crumbs
1/2 cup onion (, chopped)
1 Tablespoon barbecue sauce
1 Tablespoon mustard
1/2 teaspoon garlic powder
1 1/2 teaspoons chili powder
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 egg (, lightly beaten)
1/3 cup light brown sugar
1/2 cup ketchup
2 teaspoon dijon mustard
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl (using your hands or a large spoon), combine ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.
  • Divide the mixture among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.
  • In the meantime, in a small bowl mix together all of the ingredients for the sauce.
  • Remove the meatloaf from oven and use a paper towel to soak up any grease on the meatloaf.

4 small shallots, finely chopped (about 2/3 C)
2 Tbsp butter
1.5 lb ground beef
1/2 C gluten free breadcrumbs
1/2 C + 2 Tbsp bbq sauce, divided
1 egg
1 Tbsp gluten free Worcestershire sauce
1/2 C shredded cheese, cheddar or pepper jack
salt
pepper

Steps:

  • Heat a skillet over medium heat and add the butter. When the butter is melted, add the shallots and season with a pinch of salt. Reduce the heat to medium-low and stir to coat the shallots with butter and continue to cook over medium low heat (stirring occasionally) for about 10-15 minutes or until the shallots are golden brown.
  • Heat oven to 425 degrees and line a baking sheet with aluminum foil and spray with non-stick spray.
  • In a large bowl, add the ground beef and bread crumbs and mix them together a bit. In a small bowl, whisk together 1/4 C bbq sauce, the egg, Worcestershire sauce and season with salt and pepper. Pour the mixture over the beef and mix well to incorporate then mix in the shredded cheese.

2 tablespoons unsalted butter
1 large onion, finely diced
1 rib celery, finely diced
1 carrot, finely diced
1 clove garlic, minced
1 teaspoon chopped fresh thyme leaves or 1/2 teaspoon dried thyme
2 large eggs
1 1/2 pounds ground chuck
1/2 pound loose pork sausage
1/2 cup heavy cream
1/2 cup ketchup
1/2 cup breadcrumbs
1 1/2 tablespoons Worcestershire sauce
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 cup ketchup
1/2 cup barbecue sauce
1/4 cup yellow mustard

  • Preheat the oven to 400 degrees F. Spray a 6-cavity mini loaf pan with nonstick spray.
