What a fun way to serve meatloaf and mashed potatoes! And, in miniature form, the meatloaf is ready in about 25 minutes.

1½ lbs.(700 g) 90-95% lean ground beef
½ cup (125 mL) plain bread crumbs
½ cup (125 mL) barbecue sauce, divided
¼ cup (60 mL) milk
1 egg
1 tbsp (15 mL) dried parsley
1 tsp (5 mL) onion powder
½ tsp (2 mL) garlic powder
½ tsp (2 mL) salt
¼ tsp (1 mL) black pepper
2 cups (500 mL) mashed potatoes

Steps:

  • Preheat the oven to 375°F (190°C).Combine the beef, bread crumbs, ¼ cup (60 mL) of the barbecue sauce, and the remaining meatloaf ingredients in a large bowl; mix until well combined.Use the Large Scoop to add about 2 scoops of the meat mixture into each well of the Mini Loaf Pan. Press the meat down and use the rectangular Boat Press to create a well.Bake for 20-25 minutes, or until the meat is cooked to 160°F (71°C). (Some grease may surface. Use a paper towel to remove the grease.)Rinse the rectangular press and carefully press the hot meatloaves immediately after removing them from the oven. Allow them to cool for 5 minutes before carefully removing them from the pan.Brush the remaining barbecue sauce onto each meatloaf using the Chef's Silicone Basting Brush and fill the wells with mashed potatoes.

3/4 cup quick oats (or old-fashioned oats)
1/2 cup green bell pepper, finely chopped
1/2 cup onion, finely chopped
1/2 cup barbecue sauce, divided
1 egg
1 teaspoon dried thyme leaves
1 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 350°F Combine ground beef, oats, bell pepper, onion, 1/4 cup barbecue sauce, egg, thyme, salt and black pepper in Classic Batter Bowl; mix lightly but thoroughly.
  • Shape meat mixture into loaf in Stoneware Loaf Pan. Insert Digital Thermometer into center of meat loaf. Bake 50 minutes.
  • Spread remaining 1/4 cup barbecue sauce over meat loaf. Bake an additional 10 minutes or until meat is no longer pink in center of meat loaf and internal temperature reaches 160°F using Digital Thermometer. Remove from oven. Let stand 10 minutes before slicing.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan.
