Steps:
- 1. Preheat oven to 250 degrees F (95 degrees C).
- 2. Place popcorn and almonds in a very large bowl.
- 3. In a medium saucepan over medium heat, melt butter. Stir in brown sugar, bbq sauce, corn syrup, ginger, jalepino and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes.
- 4. Remove from heat and stir in soda and vanilla.
- 5. Pour in a thin stream over popcorn, stirring to coat.
- 6. Place in two large cookie sheets and bake in preheated oven, stirring every 15 minutes, for 1 hour
- 7. Remove from oven and let cool completely on cool surface, before breaking into pieces.
- 8. Note: I use very large commercial cookie sheets. Make sure to spread popcorn out very thin. This way popcorn evenly bakes for sugar to caramelize. Note: Optional: Add 1/2 tsp of Lemon Grass for different twist in flavor also. Note: Store immediately into zip loc bags to keep fresh
Tips:
- Use Fresh Ingredients: Always use fresh popcorn kernels for the best flavor and texture. Avoid using old or stale kernels, as they may not pop properly or have a bitter taste.
- Choose the Right Oil: The type of oil you use can affect the flavor and texture of your popcorn. Canola oil, coconut oil, and avocado oil are all good options for making BBQ popcorn.
- Measure Accurately: Be sure to measure the popcorn kernels and oil accurately. Using too much or too little of either ingredient can result in popcorn that is undercooked, overcooked, or has an unpleasant flavor.
- Shake the Pot: While the popcorn is popping, shake the pot or pan frequently. This helps to distribute the heat evenly and prevents the popcorn from burning. If you don't shake the pot, the popcorn may only pop on one side.
- Don't Overcook: Once the popcorn starts popping, listen closely for the popping sounds to slow down. When the popping slows to a few seconds between pops, remove the pot from the heat immediately. Overcooking the popcorn will make it tough and chewy.
- Season Immediately: Once the popcorn is done popping, season it immediately with the BBQ seasoning. If you wait too long, the seasoning won't stick to the popcorn as well.
Conclusion:
Making BBQ popcorn at home is a quick and easy way to enjoy a delicious and flavorful snack. With just a few simple ingredients and a little bit of time, you can have a batch of BBQ popcorn that is perfect for movie nights, parties, or snacking on the go. So next time you're craving a smoky, tangy snack, try making BBQ popcorn. You won't be disappointed!
