1 (2 pound) boneless pork shoulder roast (cut into bite-sized pieces)
1 teaspoon minced garlic
1/2 cup low sodium soy sauce
1/4 cup lime juice
1/2 cup ketchup
1/2 cup brown sugar
1 teaspoon salt
1 teaspoon pepper
1 cup ginger ale
bamboo skewers

Steps:

  • Place cut pork shoulder in a gallon sized resealable bag.
  • In a mixing bowl, whisk together minced garlic, soy sauce, lime juice, ketchup, brown sugar, salt, pepper and ginger ale.
  • Pour marinade in the bag over pork.
  • Seal bag and place in the refrigerator for 4-8 hours, or overnight.
  • Remove pork from bag and thread onto bamboo skewers that have soaked in water for 20 minutes (to prevent charring).
  • Heat grill to high heat and grill skewers for 8-10 minutes, rotating during cooking, until cooked through.

1 lb boneless, skinless chicken thighs, cut into 1-inch cubes
1 cup BBQ sauce
1 teaspoon salt
1 teaspoon pepper
4 strips bacon
4 skewers bamboo skewer, soaked in water for 20 minutes

Steps:

  • Preheat grill to medium heat.
  • Combine the chicken, bbq sauce, salt, and pepper, stirring until evenly mixed.
  • Threading one end of the bacon onto the end of a skewer. Add a piece of chicken, and weave the bacon around the chicken and back through the skewer, creating a wave pattern between the chicken. Move the bacon and the chicken down the skewer, repeating until the other edge of the bacon is threaded through.
  • Repeat on the rest of the skewers with the remaining chicken and bacon.
  • Grease the surface of the grill by rubbing the grates with tongs and an oiled paper towel.

1 (3 pound) beef tenderloin trimmed and sliced to 1/2-inch thickness
1/4 cup hoisin sauce
1/4 cup ketchup
1/4 cup prepared barbecue sauce
1 tablespoons nam pla
1/4 cup soy sauce
1 (2-inch) piece ginger, grated
1 tablespoon vegetable oil
1 tablespoon chopped scallion
1 tablespoon chopped cilantro leaves, plus more for garnish

Steps:

  • Heat a grill pan over high heat for 2 minutes and place the beef slices onto the surface for 1 minute per side. Remove immediately and set aside
  • Whisk the hoisin, ketchup, barbecue sauce, nam pla, soy sauce, ginger, vegetable oil, scallions and cilantro together in a large bowl. Add the grilled beef and refrigerate at least 1 hour to let the flavors blend.
  • Remove from the refrigerator and thread one piece of beef onto a 6" bamboo skewer. Repeat with the remaining beef, set onto a decorative platter and garnish with chopped cilantro.

From Penzey's Spices submitted by Christine Simmerman. This has become my favorite bbq sauce for chicken. I used boneless, skinless chicken thighs and did not cut them in strips, just put them on the grill over indirect heat. Very moist and the flavor was wonderful!

1 lb chicken thigh (boneless, skinless or can use breasts )
3 tablespoons soy sauce
1/4 teaspoon powdered ginger
1/2 cup hoisin sauce
1/2 teaspoon white pepper
1 garlic clove, minced

Steps:

  • Cut the chicken pieces into long thin strips, 3-4 per piece.
  • In a large bowl or zip top bag, combine the soy sauce, ginger, hoisin sauce, white pepper, and garllic.
  • Place 2 TB of the marinade in a small covered bowl.
  • Refrigerate until it is time to cook the chicken.
  • Add the chicken to the remaining marinade in the bag, toss until well coated, push the air out of bag and seal.
  • Marinate for at least 20 minutes - a few hours is nice and overnight even better.
  • Preheat oven to 400 degrees.
  • Remove the chicken from marinade.
  • Discard the marinade and skewer the chicken using a weaving method with the skewer.
  • Place on foil-lined cookie sheets in a single layer,.
  • Bakefor 15-25 minutes.
  • Flip halfway through and baste with the reserved marinade.
  • You can grill for approximately 10 minutes on each side instead of using the oven.

FILIPINO PORK BBQ SKEWERS

1 lb. of pork sliced into slightly thin strips
1/2 cup vinegar
1/4 cup ketchup (used banana ketchup for this recipe)
1/4 cup soy sauce
1/2 cup brown sugar
1 tbsp hot sauce (can add more if you want it spicy)
1 can calamansi soda (sprite would do as a substitute)
1 head of garlic crushed
1 small onion minced
salt to taste
1 tbsp cooking oil
1 tbsp sesame oil
metal, or bamboo skewers (soaked)

Steps:

  • Combine the liquid ingredients, sugar, onions and garlic and touch of salt to make your marinade. Add in the strips of pork. Let this marinade for a minimum of 1 hour, preferably overnight in the fridge. Make sure you soaked your skewers to prevent them from burning when on the grill. Skewer the meat. Set aside to let the excess marinade drip. Boil the marinade until it's reduced by half. Transfer into a bowl and mix the oil. This would be a good glaze as we grill the bbq. Sesame oil makes the bbq aromatic as we grill. Grill the skewered meat over charcoal for a few minutes. Probably would take about 5 minutes on each side. Brush both sides with the glaze to give it some shine and color. My dipping sauce would just be some spiced vinegar. Crushed garlic, minced onions and chili in some cane vinegar with a few dash of fish sauce and about a tsp of sugar. Enjoy your Filipino BBQ.

4 wooden skewers
1 (1 pound) fillet salmon
¼ cup barbecue sauce, or as needed
1 mango - peeled, seeded, and cut into chunks
1 red bell pepper, cut into chunks
1 fresh peach, pitted and cut into chunks
2 thick slices fresh pineapple, cut into chunks
3 tablespoons barbecue sauce
1 tablespoon water
1 teaspoon lime juice
1 teaspoon olive oil
1 teaspoon honey

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Place the skewers into a basin of water and allow to soak while you prepare ingredients.
  • Slather the salmon on both sides with 1/4 cup of barbecue sauce, and set aside.
  • Place mango, red bell pepper, peach, and pineapple chunks into a bowl. In a small bowl, stir 3 tablespoons of barbecue sauce with water, lime juice, olive oil, and honey until well mixed; pour the dressing over the fruit and pepper chunks, and toss to coat.
  • Thread skewers with alternating pieces of mango, red bell pepper, peach, and pineapple chunks.
  • Grill the skewers on the preheated grill, turning every few minutes, until each side of the skewered fruit is browned, about 10 minutes. Move the fruit skewers to a cool part of the grill, and place the salmon fillet onto the hot grill surface, skin side down. Grill the fish until it shows brown grill marks, the fish is opaque, and the flesh flakes easily, 6 to 8 minutes per side. Serve grilled salmon with fruit skewers.

1 lb shrimp, peeled and deveined
1/2 c asian ginger sauce (i used gordons signature) or similar sweet and spicy asian sauce
1/4 c open pit apple whiskey bbq sauce
1 large onion, peeled and sliced lengthwise for skewers
1 large avocado, peeled and sliced lengthwise in thick slices for skewers
1 large tomato, sliced lengthwise for skewers

Steps:

  • 1. Preheat the oven to 500 degrees Fahrenheit in order to get a good sear on the shrimp. Place the grilling pan in the oven while it preheats to warm the pan. Wash and slice the onion, avocado and tomatoes in large slices for the skewers (i.e. lengthwise and thick enough to hold together). Tip for slicing avocados; first slice them with the skin on then peel away the skin from the slices.
  • 2. Rinse and pat dry the shrimp and place in a large bowl.
  • 3. Add 1/2 cup of the Asian Ginger sauce and the Apple Whiskey BBQ sauce and stir well. Add the tomato, onion and avocado and toss gently to coat the ingredients well. Cover the bowl and refrigerate for 30-60 minutes. You can marinade the recipe longer or shorter periods of time, depending on how much time you have before supper.
  • 4. Using either metal or wooden skewers, spear the shrimp so that it will lay flat on the baking sheet (through the head and tail). Alternate the vegetables and shrimp on the skewer. If you use wooden skewers be sure to soak them in water for 30 minutes before baking.
  • 5. Carefully remove the baking pan from the oven and place the skewers on a baking sheet laying the shrimp and vegetables flat.
  • 6. Turn the oven setting to Broil and broil at the highest rack in the oven for 4-5 minutes, turning once during the baking time. To check for doneness, make sure the shrimp is opaque.
