2 tablespoons olive oil
1 large onion (peeled and sliced)

400 g can chopped tomatoes
900 ml vegetable stock
400 g can haricot beans (or cannelini or borlotti beans)
1 teaspoon dried oregano or mixed herbs

  • In a large saucepan, heat the olive oil
  • Fry the onion and cook until soft
  • Then add the garlic, celery and carrots and stir fry for a further 5 minutes
  • Add the courgettes and cook for a further 2-3 minutes
  • Add the tomatoes, stock, beans and basil
  • Bring to the boil and reduce to a simmer
  • Cover and cook for 25-30 minutes

1-1/2 cups chopped onions
1 cup sliced celery
1 tablespoon canola oil

2 cans (15 ounces each) navy or great northern beans, rinsed and drained, divided
2 cups fresh broccoli florets
1/2 teaspoon salt

2 medium carrots, diced small
2 celery stalks, diced small
1 medium yellow onion, diced small
3 garlic cloves, minced
1 teaspoon dried thyme
Coarse salt and ground pepper
2 cans (15.5 ounces each) cannellini beans, rinsed and drained
1 can (28 ounces) diced tomatoes
4 cups low-sodium vegetable broth

A hearty, vegetarian soup perfect for warming the belly on a rainy day. My first foray into making a completely vegetarian soup, and I can say I didn't miss the meat component at all! Goes great with a crusty bread. Good for a large gathering of people or for plenty of leftovers! My original recipe yields a large pot of soup, so I always share with my parents and still have plenty left over for lunch or dinner the next day. Please note it is important to add salt with or before the beans so that the beans can absorb some of the salt, otherwise they can taste a little bland. The soup gets better with a little time and tastes awesome the next day.

2 tablespoons olive oil, or more as needed
1 large onion, diced
12 carrots, peeled and chopped, or more to taste
15 crimini mushrooms, sliced, or more to taste

6 leaves dinosaur kale, chopped
4 leaves red Swiss chard, chopped

12 cups vegetable broth

I have since made it many times. While not exactly a soup for summer, I have made it on occasion when I didn't know what else to cook. I eat soup all year round!

1 1/2 cups 10 bean soup mix
6 cups cold water
1 large onion, chopped
2 large carrots, chopped
3 hot Italian sausages or 3 italian sweet sausage, sliced
1 (28 ounce) can diced tomatoes, undrained
1 teaspoon chili powder
1 pinch ground cloves
2 tablespoons dry sherry (optional)
1 tablespoon lemon juice
salt and pepper

Steps:

  • Rinse the bean mix, cover generously with cold water, and let soak for 8 hours or overnight.
  • Drain.
  • In a large saucepan, combine the bean mixture with 6 cups water.

1 (20 ounce) bag 15 bean soup mix
1 1/4 lbs sirloin
1 tablespoon Worcestershire sauce
6 cups water
1 (14 ounce) can beef broth, 99% fat free
3 beef bouillon cubes
1 cup onion, diced
1/2 cup celery, diced
1 bag frozen carrots, crinkle cut
1 (15 1/4 ounce) can green beans
1 (15 1/4 ounce) can whole kernel corn

Steps:

  • Soak beans for at least 6 hours or overnight.
  • Drain and rinse beans.
  • Place in large soup pot and cover with 6 cups water.
  • Add 3 beef boullion cubes, onion and celery.
  • Bring to a boil, then reduce heat to a rapid simmer.
  • Cover bean pot.
  • Meanwhile, Cube sirloin and lightly brown with Worchesire sauce.

  • Add can of beef broth and bag of frozen carrots (I let them thaw on the counter to reduce cooking time) Simmer covered 1 addittional hour.
  • Add cans of green beans and corn.
  • Simmer 15 minutes.
  • *When I add carrots and beef broth I throw in some garlic powder and whatever seasonings I have in the cabinet.
