A spicy recipe based on a variety of beans. Somewhat Mexican in style. Note: 1 day preparation only if you need to soak dried beans overnight.

50 g dried borlotti beans or 150 g pre-cooked borlotti beans
50 g dried cannellini beans or 150 g pre-cooked cannellini beans
150 g sweet corn (kernels)
250 g tomato sauce (salsa pronta)
1 teaspoon cajun spices
100 g chorizo sausage
2 tablespoons Amaretto

Steps:

  • If using dried beans, follow the instructions for cooking (generally: rinse well, soak overnight then boil for 40 minutes). I like to leave them slightly undercooked so that there's some bite.
  • Chop the chorizo sausage into small chunks.
  • Mix the cooked beans, sweet corn, tomato sauce, cajun spices and chorizo, and cook in a pan for 5 minutes to heat it thoroughly and mix in the spices.
  • Remove from the flame and add the amaretto, and mix together.
  • You can serve in tortilla pancakes, as a side dish, as a dip or in sandwiches. Keeps well in fridge and can be frozen. You can try other bean varieties - I used black beans, black-eye beans, kidney beans as well as lentils.

¾ pound bacon
1 pound ground beef
2 large onions, chopped
1 (18 ounce) bottle honey barbecue sauce
4 (15 ounce) cans pork and beans
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can lima beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
½ cup packed brown sugar
3 tablespoons cider vinegar
1 tablespoon liquid smoke flavoring
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Let cool, and crumble.
  • Place the ground beef and onions into a large skillet over medium heat, and cook and stir until the meat is no longer pink, breaking the meat apart as it cooks, about 10 minutes. Drain excess grease. Transfer the beef and onion mixture into a large Dutch oven. Stir in the crumbled bacon, honey barbecue sauce, pork and beans, kidney beans, lima beans, black beans, brown sugar, cider vinegar, liquid smoke, salt, and pepper.
  • Cover, and bake in the preheated oven until bubbling, about 1 hour.

These beans are a staple in my family's nutrition. I make them at least once a week, and as with beans they taste better the next day so I make plenty for left overs. You will need a pressure cooker for this one.

1 lb dried red beans
2 carrots, diced
1 plantain, diced
1 (5 g) envelope sazon goya
1 tablespoon salt
1 small tomatoes, diced
1/2 small onion, diced
2 stalks green onions, finely chopped
1/4 cup fresh cilantro, finely chopped
2 tablespoons oil

Steps:

  • Wash beans well with water and take out any debris.
  • Place in pressure cooker and cover with water up to the max line (approx 12 cups for a 5 quart pressure cooker).
  • Place lid on cooker creating a tight seal cook on high for 35 minutes (this will soften the beans).
  • Take pressure cooker of the stove and allow steam to escape completely before opening.
  • Add carrots, plantain, sazon, and salt.
  • If you like your beans more soupy (which I do) add more water to replace what has been lost, if you do not they will be rather on the dry side and you will have to watch more carefully on the next step because they have a higher risk of burning.
  • Cover again and cook on med-high for 20-30 minutes.
  • While beans are cooking sauté the tomato, onions, and cilantro in the oil add a pinch of salt.
  • Once the beans are done add the hogado and test the beans for softness, if necessary cover and cook an additional 5-10 minutes.
  • Serve with white rice and the meat of your choice, enjoy!

2 small shallots, chopped
2 small garlic cloves, chopped
½ cup chopped kale
2 tablespoons condensed cream of chicken soup
1 tablespoon sriracha sauce
1 tablespoon cream cheese
1 tablespoon sour cream
1 (15 ounce) can cut green beans, drained
ground black pepper to taste

Steps:

  • Heat oil in a skillet over medium heat. Fry shallot and garlic in hot oil until golden brown, 2 to 3 minutes; add kale, cream of chicken soup, sriracha sauce, cream cheese, and sour cream to the skillet. Cook and stir the mixture until the cream cheese melts and the liquid is even in color, about 5 minutes.
  • Stir green beans into the mixture to coat, season with black pepper, reduce heat to medium-low, and simmer until the sauce thickens slightly, 5 to 7 minutes.

AZORE-STYLE FEIJOS (BEANS)



Azore-Style Feijos (Beans) image

An Old World bean soup recipe given to me by my husband's cousin's grandparents who are from the Portuguese Azore Islands. You can follow the spice trade route with this recipe. Pity that pink beans are not used much in cooking. They are so delicious! This makes the house smell so good! Can easily be prepared vegetarian.

2 cups dried pink beans, picked over and soaked
8 cups water
3 -4 slices bacon, crisply cooked (substitute ham hock, read NOTE*)
1 medium yellow onion, chopped
2 garlic cloves
1 cinnamon stick
1 teaspoon cumin powder
1 teaspoon coriander seed
5 -6 whole cloves
8 whole allspice
2 bay leaves
6 ounces tomatoes (diced or pureed)
salt and pepper

Steps:

  • *NOTE: Can also substitute sausage for the bacon or ham hock. Portuguese linguica, Spanish chorizo or Louisiana andouille, vegetarian "soyrizo", etc. are suggestions. My preference being bacon as I don't care for sausage or ham hock.
  • For additional flavor, I usually dry roast the spices in a castiron skillet.
  • Soak the beans overnight. Cook the bacon or ham hock and drain on paper towel. Next saute the onion and garlic. Once cooled, break up the bacon into little pieces.
  • In large Dutch oven or in crock pot, combine all the ingredients, including the water, excluding the salt. If using a Dutch oven, simmer the beans on medium-low for about 1 1/2 to 2 hours or until beans are soft.
  • If using a crock pot simmer on low 8 hours or until beans are soft. Salt the beans once cooked.
  • Adjust seasoning before serving. Now season with salt.
  • Remove whole cloves, cinnamon stick and whole allspice.
  • Great with freshly baked, crusty bread. Tastes even better if prepared one day ahead then warmed.

Tips:

  • When cooking beans, always start with dried beans and soak them overnight before cooking. This will help to reduce the cooking time and make the beans more digestible.
  • To cook beans in a slow cooker, add the beans, water, and seasonings to the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
  • To cook beans in an Instant Pot, add the beans, water, and seasonings to the Instant Pot and cook on high pressure for 30 minutes. Then, let the pressure release naturally for 10 minutes before opening the lid.
  • When cooking beans in a pot on the stovetop, bring the beans, water, and seasonings to a boil. Then, reduce the heat to low and simmer for 1-2 hours, or until the beans are tender.
  • Beans can be used in a variety of dishes, including soups, stews, salads, and burritos. They are also a good source of protein, fiber, and vitamins.
