Here's an old stand by for a nice bear dinner. I found this in my hand written recipe saves but I've also found something like it on the net so I'm not the only one who uses it. If ya like bear...give it a try.

Number Of Ingredients 8

1 1/2-2 lbs bear steak (cut in thin strips)
2 tablespoons vegetable oil
2 onions, cut into sliced rings
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 (4 ounce) can sliced mushrooms (drain & reserve liquid)
3/4 cup dry sherry
2 -3 pinches minced garlic, to taste
hot cooked rice, as much as you like

Steps:

  • Cut bear steak into thin strips about finger width.
  • In a cast iron skillet brown bear meat in oil, using high heat.
  • Add onions.
  • Saute until tender.
  • Blend soup, sherry, liquid from mushrooms, and minced garlic.
  • Pour over steak meat.
  • Add mushrooms.
  • Reduce heat; cover and simmer approx 1 hour or until steak is tender.
  • Serve over a nice plate of hot rice with a few splashes of soy sauce.

YELLOW RICE

2 tablespoons extra-virgin olive oil
1 small yellow onion, chopped
1/2 green bell pepper, seeded and chopped
1 teaspoon ground annatto seed
1 1/2 cups long-grain rice, (preferably not converted)
2 1/2 cups water
2 teaspoons kosher salt
1 bay leaf
Serving suggestion: Black Beans recipe follows
1 1/4 cups black beans (about 1/2 pounds)
12 cups water
1 bay leaf
2 tablespoons extra-virgin olive oil
1 medium onion, chopped
1 green bell pepper, stemmed, seeded and chopped
10 cloves garlic, minced
2 teaspoons ground cumin
2 teaspoons dried oregano
1 teaspoon ground coriander
1 tablespoons red wine vinegar, plus more for the table
1 tablespoon kosher salt
Pinch of cayenne pepper
Freshly ground black pepper

Steps:

  • Heat the oil in a medium saucepan, with a tight-fitting lid, over medium-high heat. Add the onion, pepper, and annatto, and cook, stirring, until somewhat soft, about 2 minutes. Add the rice and cook, stirring, until toasted, about 2 minutes more. Add water, salt, and bay leaf and bring to a boil. Wrap the lid tightly with a kitchen towel. Cover the rice, lower the heat to a simmer, cook for 20 minutes.
  • Remove the rice from the heat and set aside, covered, for 10 minutes. Remove the lid and fluff the rice with a fork. Serve with the black beans.
  • Put the beans in a large saucepan, add the water and bay leaf, and bring to a boil. Set aside, covered, for 1 hour.
  • Return the beans to a boil, lower the heat to a simmer, cook uncovered, for 1 1/2 hours.
  • Heat the oil in a medium skillet over medium-high heat. Add the onion and peppers and cook, stirring, until soft, about 5 minutes. Add the garlic, cumin, oregano, and coriander and cook, stirring, until fragrant, about 1 minute more. Add the onion mixture to the beans and continue simmering until the beans are very tender and the liquid has thickened, about 1 1/2 hours more.
  • If the beans seem too thick, adjust the consistency with a little bit of water. Stir in the vinegar, season with the salt, cayenne, and pepper to taste. Serve.
  • Yield: about 4 side dish servings

2 tablespoons olive oil
1 small onion, finely chopped
2 garlic cloves, finely chopped
1/4 teaspoon cayenne
1/2 teaspoon cumin
1/2 teaspoon chile powder
2 plum tomatoes, chopped
2 cups cooked or canned black beans, soaked and rinsed
1 cup water
3 tablespoons chopped parsley or cilantro
4 cups white rice
Salsa, grated cheddar cheese, sour cream, chopped red onions or scallions for garnish

Steps:

  • In a large skillet heat oil over medium high heat. Stir in onion and cook for 2 minutes. Stir in garlic, cayenne, cumin, chili powder and cook for 1 minute. Stir in tomatoes, beans, and water and stir well. Simmer mixture for 15-20 minutes or until it has thickened. Stir in the chopped parsley or cilantro. Serve hot over rice with various toppings.

CARIBBEAN RICE AND BEANS

1/4 cup vegetable oil
1 large onion, chopped
2 cloves garlic, chopped
1/2 Scotch bonnet pepper, seeded and diced (while handling, protect your hands and eyes, and avoid breathing fumes)
2 (16-ounce) cans black beans (or your choice of beans), rinsed clean
2 tablespoons rice wine vinegar
1 cup dry rice
2 cups chicken or vegetable stock
2 tablespoons chopped fresh parsley leaves
1 tablespoon chopped chives
Hot sauce, to taste (recommended: Tabasco)
Salt and freshly ground black pepper

Steps:

  • Heat the oil in a large skillet. Gently saute onions, garlic and hot peppers, then add beans and vinegar and cook for about 5 minutes. Add the rice to the beans, then stir in stock, reduce heat, and simmer until rice is cooked, about 15 to 20 minutes. Stir in parsley, chives, hot sauce, salt, and pepper and serve.

This deeply flavored rendition is inspired by these comforting traditions and a desire to wash as few dishes as possible: The rice cooks with the beans and the starchy liquid they're canned in. As the two ingredients cook together, the beans disperse and glom onto the rice. For an extra kick, sauté chopped jalapeño with the onions, or add 1/4 cup salsa with the stock.

Steps:

  • In a large saucepan or Dutch oven with a tight-fitting lid, warm the olive oil over medium heat. Add onion and sauté until translucent, about 3 minutes. Add the stock, cover and bring to a boil.
  • Add the salt, rice and beans (including the liquid). Stir just to combine, then cover.

CLASSIC BLACK BEANS AND RICE

This is a typical dish served in Cuba or Puerto Rico, each country has their own method of preparation. You can flavor this dish with meat, but I left it out as I serve it as a side dish with my meats. It is an easy and healthy short cut and takes about 30 minutes to cook.

2 tablespoons olive oil
1/2 cup chopped onion
1/4 cup chopped green pepper
2 cloves of minced garlic
1 (15 ounce) can black beans (undrained)
3/4 cup water
1 teaspoon oregano
1/4 teaspoon sugar
1 package sazon goya (without annato *see note)
1 tablespoon cooking wine or 1 tablespoon cider vinegar
2 cups cooked white rice

Steps:

  • Heat oil in a medium sauce pan, sauté onion,green pepper, and garlic.
  • Sauté until tender@8-10 minutes.
  • Add in remaining ingredients and stir until boiling, reduce heat and simmer until sauce is reduced@ 20 minutes.
  • Serve over white rice.
  • I like to mash a few of the beans with the back of a spoon to flavor the sauce.
  • Note: if you do not have Sazòn Goya an appropriate substitute would be ground cumin, chicken bouillon, and garlic salt to taste.

Here's what you need: sesame oil, garlic, soy sauce, short grain rice, eggs, salt, cheese, roasted seaweed

1 tablespoon sesame oil
3 cloves garlic, minced
3 tablespoons soy sauce
3 cups short grain rice, cooked
2 eggs
½ teaspoon salt
1 slice cheese
1 sheet roasted seaweed

Steps:

  • Cook the garlic in the sesame oil until garlic starts to brown slightly.
  • Add the soy sauce and rice, mixing until the rice is evenly coated. Set aside.
  • Beat the eggs with the salt in a medium bowl.
  • Pour the egg mixture into a nonstick pan over low heat, and swirl the egg around the pan into a perfect circle. Cook on low heat until the egg is cooked through, then remove from heat.
  • Mold the rice into 2 large oval shapes, the larger one for the body and smaller one for the head. Make the arms and legs by molding the rice into 4 small cylinder shapes. Make the ears by forming small half circles with the rice.
  • Cut 2 circles from the cheese using a bottle cap. Slice one of the circles in half. These will be the ears, and the full circle will be the nose.
  • Slice a 1½-inch (4 cm) strip from the large egg circle, and roll that up for the pillow.
  • Using scissors, cut 2 extremely short and thin strips from the seaweed for the eyes. Cut a small triangle for the nose.
  • To assemble, place the pillow on the edge of the plate, and plate the head on top at an angle. Place the body next to the head, followed by the 4 arms and legs.
  • Place the two rice ears on the bear, then the two cheese ears on the rice ears. Place the cheese nose farther down on the face, then place the seaweed triangle in the middle of that. Carefully place the two "eyes" next to the nose.
  • Lay the egg blanket over the sleeping bear, making sure to tuck him in afterwards!
  • Enjoy!
