1 Tablespoon olive oil
1 medium onion (- diced)
2 cloves garlic (- diced)
1 pound lean ground beef
1 Tablespoon ground cumin
1 teaspoon red pepper flakes
kosher salt & freshly ground black pepper (- to taste)
1 15 oz. can black beans (- rinsed and drained)
1 8 oz. can Mexicorn (- drained)
1 15 oz. can fire-roasted tomatoes (- drained)
1 small can green chilies
12 oz. tortilla chips (- combination of blue chips and corn chips)
8 oz. sliced cheddar cheese
8 oz. shredded Mexican cheese
sliced cherry tomatoes, avocado slices, sour cream, cilantro (- to serve)

Steps:

  • Heat a medium saucepan on the stove and add olive oil. When hot, add onion and sauté until soft and translucent. Add garlic and cook for 30 more seconds.
  • Add ground beef, cumin, salt and pepper - and cook until brown and crumbled. Drain excess grease and return to pot.
  • Add beans, corn, tomatoes, salsa, and chilies. Stir and continue to cook for about 15 minutes, or until most of the liquid is absorbed. Set aside.
  • Preheat oven to 400 degrees.
  • Line a baking sheet with parchment paper. Layer chips, sliced cheese, meat and bean mixture. Repeat by adding more chips, sliced cheese, meat and bean mixture. Add shredded cheese to the top and bake for approximately 15-20 minutes.
  • To serve, top with cherry tomatoes, avocado slices, sour cream, jalapeno slices, and cilantro.

Taco Seasoning ((or you can use one packet/ serving of store-bought taco seasoning))
1 pound ground beef
1/2 yellow onion (diced)
2 bags tortilla chips ((16 ounces each))
1 can refried beans
16 ounces shredded cheese of choice ((I used cheddar and Monterey jack))
3 roma tomatoes (diced)
2 to 3 green onions (sliced)

Steps:

  • Preheat the oven at 400 degrees.
  • Meanwhile on the stovetop, brown the ground beef and diced onions over medium-high heat until fully cooked (about 8 minutes) and drain.
  • Return the beef to the pan, and sprinkle on the taco seasoning.
  • Stir in 3/4 cup water, bring it to a simmer, reduce heat and simmer until the liquid mostly evaporates, about 5 minutes.
  • While the beef is cooking, add a generous layer of chips to two baking sheets lined with parchment paper.
  • Spoon on refried beans, half on each pan. These are thick, but I just add spoon fulls all over the chips. (The spoon fulls will spread with the heat of the oven.)
  • Spoon on half the ground beef to each pan of chips.
  • Sprinkle shredded cheese on top.
  • Bake at 400 degrees for 15 minutes.
  • Remove from the oven, and sprinkle on diced tomatoes and green onions.
  • Serve immediately.

And so we give you a platter of double-layered nachos that combine ground beef and black beans with heaps of tomato, cheese, scallions, olives and jalapenos. Whatever recipe or toppings you use to build your nacho platter, be sure to assemble them in layer of chips and toppings. This minimizes the number of naked tortilla chips left on the bottom of the plate. This recipe alsp includes a bath of guacamole. To save time, you could substitute purchased guacamole, or leave it out entirely and spoon salsa over the finished nachos.

1 medium yellow onion, diced
6 garlic cloves
1 lb ground beef

1 medium onion, chopped
1 -2 tablespoon fresh minced garlic (or to taste)
1 medium green bell pepper, seeded and chopped

1 1/2 cups salsa
1 cup corn kernel
1 cup sour cream
2 tablespoons taco seasoning mix (I use 1/2 package)

1 (19 ounce) can black beans (rinsed and drained)
4 cups coarsly crushed tortilla chips (can use more)
3 cups shredded cheddar cheese, divided (or use Monterey Jack cheese)

Steps:

  • Grease a 13 x 9-inch casserole dish or a 3-quart oval baking dish.
