BEEF KELAGUEN (KELAGUEN KåTNE)

Beef Kelaguen (Kelaguen Kåtne) image

I'm posting this recipe for someone I met at a softball game. When she learned that I am Chamoru and from Guam she told me that she loves Finadene and Beef Kelaguen. I couldn't recall my recipe at the time so I promised to post it here. Beef Kelaguen is a Chamoru delicacy made with raw beef and chemically cooked or cured with citric acid. It is usually served as a chaser with beer or eaten with Chamoru Red Rice. Back home we like this SPICY, but just omit the pepper to make it more friendly for those can't take the heat ;). All measurements are approximate and can be adjusted to taste, tangier or saltier, it's all up to you...Enjoy :)

1 lb extra lean beef
1 cup lemon juice (fresh squeezed is best)
1/4 cup soy sauce
1/2 cup chopped green onion
1/2 cup chopped or sliced onion
2 teaspoons korean red pepper flakes or 2 teaspoons chopped fresh Thai peppers
salt

Steps:

  • Trim beef of all fat and slice into thin strips.

Number Of Ingredients 6

1 (3 pound) whole chicken
1 coconut, drained and meat grated
2 lemons, juiced
1 bunch green onions, chopped
3 tablespoons dried red pepper flakes
salt to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Place whole chicken into a roasting pan. Roast in the oven for 1 hour, or until the leg moves easily within its socket. Remove from the oven, and allow the chicken to cool slightly.
  • Remove the skin from the chicken and discard. Tear the meat from the bones, and chop into small pieces. Discard bones, and place the chicken in a large bowl. Stir in green onions and grated coconut. Sprinkle liberally with lemon juice. Season with salt and red pepper flakes. Taste and adjust amounts of lemon juice, salt and red pepper so that one does not overwhelm the others.

Tips:

  • Use fresh, high-quality ingredients for the best flavor.
  • If you can't find coconut vinegar, you can substitute another type of vinegar, such as white vinegar or apple cider vinegar.
  • Be careful not to overcook the beef, or it will become tough.
  • Serve kelaguen with rice, vegetables, or tortillas.
  • For a spicier kelaguen, add more chili peppers.
  • If you don't have time to marinate the beef, you can skip this step. However, marinating the beef will help to tenderize it and make it more flavorful.
  • You can also add other vegetables to the kelaguen, such as onions, carrots, or bell peppers.

Conclusion:

Kelaguen is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to use up leftover beef, and it is also a good source of protein and vegetables. Whether you are looking for a quick and easy meal or a special occasion dish, kelaguen is a great choice.
