Tips for Making Perfect Beef Mashed Potato Stuffed Bell Peppers with Garlicky Bread Crumbs

  • Choose the right bell peppers. Look for bell peppers that are firm, brightly colored, and have smooth skin. Avoid peppers that are bruised or have blemishes.
  • Cook the beef thoroughly. Ground beef should be cooked until it is no longer pink in the center. Use a meat thermometer to ensure that the beef has reached an internal temperature of 160 degrees Fahrenheit.
  • Make sure the mashed potatoes are smooth and creamy. Use a potato ricer or food processor to ensure that the mashed potatoes are smooth and lump-free. Add milk, butter, and salt and pepper to taste.
  • Stuff the bell peppers tightly. Use a spoon or your hands to stuff the bell peppers with the beef and mashed potato mixture. Make sure the peppers are packed tightly so that they don't fall apart during baking.
  • Bake the bell peppers until they are tender. Bake the bell peppers at 350 degrees Fahrenheit for 30-35 minutes, or until the peppers are tender and the beef and potatoes are heated through.
  • Make the garlicky bread crumbs. Combine bread crumbs, garlic powder, onion powder, parsley, and Parmesan cheese in a bowl. Drizzle with olive oil and toss to coat.
  • Top the bell peppers with the garlicky bread crumbs. Sprinkle the garlicky bread crumbs over the top of the bell peppers before baking. This will give the peppers a delicious crispy topping.
  • Serve the bell peppers immediately. Beef mashed potato stuffed bell peppers are best served immediately after baking. They can be garnished with fresh parsley or chives.
