Tips:

  • For a richer, more flavorful filling, use a combination of ground beef and ground pork.
  • To make the filling ahead of time, cook it completely and then let it cool. Store the filling in an airtight container in the refrigerator for up to 3 days, or in the freezer for up to 3 months.
  • When assembling the pot pies, be sure to brush the edges of the pastry with water before sealing them. This will help to create a tight seal and prevent the filling from bubbling out.
  • If you don't have a pastry brush, you can use your fingers to apply the water to the edges of the pastry.
  • To prevent the tops of the pot pies from getting too brown, tent them with aluminum foil halfway through baking.
  • Serve the pot pies hot with your favorite sides, such as mashed potatoes, roasted vegetables, or a fresh salad.
