BEEFY SPANISH RICE
This recipe can be altered to fit any taste by adjusting how spicy and saucy you make it. On occasion, I like using ground turkey in place of the beef-or adding leftover spaghetti sauce instead of the tomato paste.

Steps:
- 1. Add jalapeno and onion to skillet and let it cook for a couple of minutes. Then add your ground beef and brown it. Drain & return to skillet. Now I use a cast iron skillet for all my cooking - I just love my cast iron! Anyway - Then add your garlic and mix it in. Add tomatoes stir it in and then add your taco seasoning - (I don't add any water to this) Then I let it sit on low for about 3 minutes or so then I add the rice and hot sauce and salt and pepper to taste. After this you let it sit on low for an additional 2 or 3 minutes to marry in the hot sauce and then serve.
- 2. I usually serve this with mashed potatoes and some mexican cornbread. My family loves it! You can always add more peppers or more hot sauce or leave them out all together if you don't like the heat.
Tips:
- Choose the right rice: Short-grain rice, such as Japanese or sushi rice, is best for beefy rice because it absorbs the flavors of the beef and vegetables well.
- Brown the beef well: Browning the beef gives it a richer flavor and helps to keep it moist.
- Use a variety of vegetables: Adding a variety of vegetables to your beefy rice will give it more flavor and nutrition. Some good choices include carrots, celery, onions, and peas.
- Season the rice well: Seasoning the rice with salt, pepper, and other spices will help to enhance the flavor of the dish.
- Cook the rice according to the package directions: Cooking the rice according to the package directions will ensure that it is cooked properly.
- Let the rice rest before serving: Letting the rice rest for a few minutes before serving will allow it to absorb the flavors of the beef and vegetables.
Conclusion:
Beefy rice is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover beef. With a few simple tips, you can make a beefy rice dish that is sure to please everyone at the table.
