Time 1h20m

Yield 4 servings

Number Of Ingredients 17

1 1/2 teaspoons unsalted butter
1/2 medium onion, finely diced
1 clove garlic, minced
1 cup ketchup
1/2 cup molasses
1/2 cup apple cider
2 tablespoons sugar
1/2 cup lager-style beer
1 1/2 teaspoons yellow mustard
2 teaspoons lemon juice
1 1/2 teaspoons Worcestershire sauce
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons paprika
2 1-pound strip steaks (1/2 inch thick)
Salt and freshly ground pepper
1 tablespoon vegetable oil
4 grilled eggs (recipe below)

Steps:

  • Make the sauce: In a medium saucepan over medium heat, melt the butter. Add the onion and garlic and saute until softened, about 3 minutes. Add the rest of the sauce ingredients; bring to a boil, then simmer until the sauce is reduced to 2 cups, about 30 minutes.
  • Meanwhile, preheat a grill to medium-high. Season the steaks with salt and pepper and rub with the oil. Grill for 3 to 5 minutes per side for medium-rare. Let rest for 10 minutes before slicing. Serve with the beer-molasses sauce and the grilled eggs.
  • Place a cast-iron skillet on the grill; add butter, oil or bacon drippings. Crack in eggs and season to taste (the Neelys use a blend of paprika, sugar and onion powder, plus salt and pepper). Cook until the edges are crisp but the yolks are still runny, 2-3 minutes.

Tips:

  • Begin by gathering all the necessary ingredients and equipment. Make sure you have all the spices, sauces, and measuring tools ready.
  • Properly prepare the pork ribs by removing the membrane and trimming any excess fat. This will help the sauce penetrate the meat more effectively.
  • Use a large pot or Dutch oven to cook the ribs. This will allow the ribs to be fully submerged in the sauce and cook evenly.
  • Bring the sauce to a boil before adding the ribs. This will help to infuse the sauce with flavor and prevent it from burning.
  • Simmer the ribs in the sauce for at least 2 hours, or until the meat is fall-off-the-bone tender. The longer you cook the ribs, the more flavorful they will be.
  • Baste the ribs with sauce every 30 minutes or so to keep them moist and prevent them from drying out.
  • When the ribs are cooked, remove them from the pot and let them rest for a few minutes before serving. This will allow the juices to redistribute throughout the meat.
  • Serve the ribs with your favorite sides, such as mashed potatoes, coleslaw, or corn on the cob.

Conclusion:

This beer and molasses barbecue sauce is a delicious and easy-to-make sauce that is perfect for ribs, chicken, or pork. The combination of beer, molasses, and spices creates a rich and flavorful sauce that will tantalize your taste buds. Whether you are a seasoned grill master or a beginner, this sauce is sure to impress your friends and family. So fire up your grill and get ready to enjoy some mouthwatering barbecue!
