This is OMG the best marinade I have ever used on tuna steaks. So much flavor, I will never go back to any other marinade.

1/2 cup beer
1/3 cup chopped green onion
1/4 cup orange juice
1/4 cup soy sauce
2 tablespoons lemon juice
2 tablespoons grated fresh ginger
2 garlic cloves, minced
2 tablespoons sugar
4 tuna steaks, at least 3/4 inch thick

Steps:

  • Mix all the ingredients except the tuna in a medium size bowl or in a gallon size ziplock bag.
  • Marinade your tuna right in the ziplock bag, or pour over tuna in a marinader or bowl or pan and refrigerate for 30 minutes turning occasionally.
  • Prepare grill for direct cooking over medium-high heat. Lightly oil grill.
  • Remove tuna from marinade and discard the rest. Grill tuna 3 minutes per side or until nicely marked and pink in the center.
  • ENJOY!

1/4 cup lime juice
3 tablespoons extra-virgin olive oil
1 tablespoon finely minced sun-dried tomatoes
1 teaspoon ground cumin
Hot pepper sauce to taste
2 1/2 pounds fresh tuna steaks (see note)
Pepper salsa (see recipe)

Steps:

  • Combine the lime juice, olive oil, sun-dried tomatoes, cumin and hot pepper sauce in a glass or ceramic dish large enough to hold the fish snugly in a single layer.
  • Cut the fish into six uniform pieces. Place them in the dish, turn them once to coat both sides, cover and refrigerate for at least two hours. Turn the fish once while it is marinating.
  • Heat a grill or broiler. Grill or broil the tuna until it is seared on the outside but still rare in the middle, two to three minutes on each side, depending on the thickness of the fish and the heat of the grill or broiler.
  • Serve at once topped with the pepper salsa.

2 cups fresh sugar snap peas
2 tablespoons honey
1 tablespoon butter
1 snack-size cup (4 ounces) mandarin oranges, drained

5 tablespoons sesame ginger marinade, divided

  • Cook rice according to package directions. In a large skillet, saute peas in butter and honey until crisp-tender. Steps:

  • Place tuna steaks in a shallow baking dish. Mix orange juice, soy sauce, olive oil, parsley, lemon juice, garlic, oregano and pepper to make a marinade.   • Mix all other ingredients together and pour over steaks. Cover and put in fridge for 1 to 3 hours.
  • Remove tuna from the marinade. Shake excess moisture from the steaks. Pre-heat oiled griddle pan.

1 medium lime, juiced
1 medium lemon, juiced
¼ cup diced red onion
2 tablespoons minced habanero pepper
1 teaspoon cider vinegar
1 teaspoon minced garlic
1 pinch dried oregano
½ cup cubed mango
¼ cup diced red onion
1 tablespoon minced fresh cilantro
salt and ground black pepper to taste
2 (4 ounce) tuna steaks
salt and freshly ground black pepper to taste
5 ounces kettle-cooked potato chips
2 tablespoons unsalted butter
1 tablespoon sweet chili sauce
1 cup hot cooked jasmine rice
