This is juicy and yummy. I kinda combined several differerent recipes and threw in my own flava. My awesome husband Ben loved it.

10 chicken strips, skinless
1/3 cup butter, melted (or Smart Balance)
1 egg
2 teaspoons garlic powder
1/4-1/2 cup hot sauce (I used Tabasco)
1/2 cup dry breadcrumbs
1/2 cup finely grated cheddar cheese
1/4 cup parmesan cheese
1 cup flour
1 teaspoon salt (to taste)
1 teaspoon pepper (to taste)

Steps:

  • Preheat oven to 350.
  • Mix Butter,Garlic powder, Egg and Hot Sauce until smooth.
  • In separate pan, combine Dry bread crumbs, Finely grated cheese, and Parmesan cheese.
  • In another pan, mix Flour, Salt and Pepper.
  • Rinse and pat dry Chicken strips.
  • Dip Chicken strip in the wet mixture.
  • Dredge in the flour
  • Place in Breadcrumb mixture and sprinkle it over the top of it (I patted it a little to make sure it was sticking good, then flipped it over and did it again).
  • Place strips on a wire rack on top of a cookie sheet.
  • Bake for 30-35 Minutes.

2 boneless skinless chicken breasts
2 peaches (cut into small pieces)
1 lime
2 oranges
1 habanero pepper
1/2 tablespoon lemon pepper
1 teaspoon salt
3/4 cup olive oil
1 pinch cayenne
1 tablespoon honey
2 tablespoons butter

Steps:

  • For Marinade:.
  • In big bowl mix in 2/4 cup of olive oil, lemon pepper, salt, cayenne. Add zest of 1 orange and 1 lime.
  • Add the juice of 1 orange and lime.
  • Add Chicken Breasts, mix around, and cover in fridge for 2 hours.
  • For Peach Habanero Sauce:.
  • In blender/food processor place 1 Peach cut up into small pieces, Honey, 1/4 cup Olive oil and whole Habanero (depending on how spicy you want it) Puree the mixture.
  • Preheat oven to 375.
  • Take Chicken out of marinade (save marinade) and place in a pan on stove over Medium High heat with 1 tbsp butter (butter first til melted then chicken) Cover, flipping every 2 mins for 8 minutes In glass casserole pan place 1 tbsp butter separated into tiny pieces randomly in pan. Place Chicken in Pan, pour remaining marinade over. Add Peach Habanero sauce over chicken (again depending on how spicy you want it) and Remaining Peach pieces.
  • Bake in oven for 30 to 45 mins (until inside of chicken is 165 degrees).

1 habanero pepper, cut in half, seeds removed
1/2 cup olive oil
1/4 cup white vinegar
3 garlic cloves, minced
2 teaspoons salt
1 teaspoon cilantro, chopped
1 tablespoon lime juice
6 chicken drumsticks
1/2 medium onion, sliced

Steps:

  • Preheat oven to 400 degrees.
  • Place habanero pepper on a baking sheet and roast for 10 - 15 minutes or until soft.
  • Combine roasted habanero pepper, olive oil, vinegar, garlic, salt, cilantro and lime juice in a food processor. Process until well blended.
  • Place chicken in a bowl. Pour marinade over the top. Cover and refrigerate for at least 2 hours.
  • When ready to cook. Preheat oven to 400 degrees.
  • Place chicken in a baking dish or oven proof pan. Pour marinade over the top. Lay sliced onions around chicken. Cook in preheated oven for 35 - 40 minutes or until chicken is cooked through and browned.
  • Transfer chicken to a serving platter and spoon sauce over the top. Serve.
