Provided by Valerie Bertinelli

Categories     dessert

Time 55m

Yield 1 cup

Number Of Ingredients 3

3 cups mixed raspberries and blueberries
2 to 3 tablespoons sugar
Zest of 1/2 lemon and juice of 1 lemon

Steps:

  • Combine the berries, sugar, lemon zest and juice in a medium saucepan set over medium heat. Bring to a boil and cook until the berries burst and the liquid starts to thicken, about 5 minutes.
  • Strain the mixture through a fine-mesh sieve, forcing the berries through by pushing and scraping with a rubber spatula. The more you force through, the thicker the sauce will be (the pulp closest to the seeds contains the most pectin, which is a natural thickener). Let cool completely and store in the refrigerator until ready to serve.

BERRY SAUCE

Berry Sauce image

Quick and easy, this berry sauce is delicious spooned over vanilla ice cream. From the book "Mad Hungry," by Lucinda Scala Quinn (Artisan Books).

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Number Of Ingredients 5

1 8-ounce bag frozen berries
1/2 teaspoon sugar (depending on the sweetness of the berries)
Juice from 1/2 lemon
4-5 grates of lemon zest
Vanilla ice cream

Steps:

  • Pour the frozen berries into a saucepan over medium heat. Sprinkle the sugar, lemon juice, and lemon zest over the berries and stir. Cook the mixture down until it reaches a saucelike consistency. Serve drizzled over ice cream.

Tips:

- For a classic berry topping, combine strawberries, blueberries, and raspberries in a bowl. Toss with sugar, lemon juice, and cornstarch. Let sit for 15 minutes, then simmer over medium heat until thickened. - For a more decadent topping, use a mixture of fresh and frozen berries. The frozen berries will help to thicken the sauce without having to add cornstarch. - If you don't have fresh berries on hand, you can use frozen berries instead. Just be sure to thaw them before using. - To make a vegan berry topping, use coconut milk or almond milk instead of dairy milk. You can also use agave nectar or maple syrup instead of sugar. - For a sugar-free topping, use a sugar substitute like stevia or erythritol. You can also use unsweetened almond milk or coconut milk instead of sweetened milk.

Conclusion:

There are many different ways to make a berry ice cream topping. The best topping for you will depend on your personal preferences and what you have on hand. With so many delicious options to choose from, you're sure to find a berry topping that you'll love. So next time you're making ice cream, be sure to top it off with a generous helping of fresh, delicious berries.
