This easy bruschetta recipe from Food Network's Ree Drummond makes a great appetizer or tasty first course for a larger meal.

Categories     appetizer

Time 1h30m

Yield 12 servings

Number Of Ingredients 9

4 tablespoons olive oil
5 cloves garlic, finely minced
1 pint red grape tomatoes, halved lengthwise
1 whole baguette or crusty loaf
1 pint yellow grape tomatoes, halved lengthwise
1 tablespoon balsamic vinegar
16 whole fresh basil leaves, plus more as needed, chiffonade
Salt and freshly ground black pepper
1 stick butter

Steps:

  • In a small skillet, heat the oil over medium-high heat. Add the garlic and stir, lightly frying for about a minute, removing before the garlic gets too brown (it can be golden). Pour the garlic and oil into a mixing bowl and allow to cool slightly.
  • Add the red and yellow tomatoes, balsamic and basil to the bowl. Sprinkle with salt and pepper. Toss to combine, and then taste and add more basil if needed, and more salt if needed (don't over salt, though!) Cover and refrigerate for an hour or two if you have the time.
  • Cut the baguette into diagonal slices to allow for the most surface area possible. Melt 4 tablespoons of the butter in a large skillet and grill half the bread on both sides, making sure they're nice and buttery. Cook until golden brown on both sides. Repeat with the remaining 4 tablespoons butter and the other half of the bread.
  • To serve, give the tomato mixture a final stir, and then spoon generously over the slices of bread. Serve on a big platter as a first course or appetizer.

BEST EVER BRUCHETTA

Provided by Jfoxe

Categories     Vegetable

Time 15m

Yield 4 cups, 4-6 serving(s)

Number Of Ingredients 12

3 cups tomatoes, chopped and drained
1/2 cup fresh basil, chopped finely
2 -3 tablespoons garlic, crushed (I get the kind in the jar, it has a good flavor and is eaiser than doing it yourself)
1/4-1/2 lb fresh mozzarella cheese, cut into small cubes
olive oil
balsamic vinegar
garlic salt (optional)
1 loaf Italian bread, cut into slices appx 1/2 inch thick
olive oil
garlic powder
parsley
paprika

Steps:

  • For The Bruchetta:.
  • Mix together tomatoes, basil, garlic, and cheese.
  • drizzle olive oil and vingar over the tomato mixture. You don't want to skimp but you don't want to go over board either. For 3 cups of tomato mixture I would reccomend about a cup of liquid. Appx 3/4 cup of oil and a 1/4c of vinigar but this is just an estimate. Go by your own preference.
  • Stir the ingredients.Taste it and add more oil, vinigar, as needed. You can also ad a little garlic salt if you think it needs salt.
  • For The Garlic Toast:.
  • Cut the bread slices in half so they are snack sized (if you used italian bread. If you use french bread the slices should be perfect sized).
  • Spread slices on a broiler pan, drizzle w/ olive oil, sprinkle with garlic powder, parsley, and a touch of paprika. Put under the broiler untli toasted but not burned.

Tips:

  • Use high-quality ingredients, especially the bread and tomatoes.
  • Choose a sturdy bread that can hold up to the toppings.
  • Toast the bread lightly to give it a crispy texture.
  • Use ripe, flavorful tomatoes.
  • Chop the tomatoes into small pieces so they are easy to eat.
  • Add a variety of toppings to your bruschetta, such as fresh basil, garlic, olive oil, and cheese.
  • Don't overload the bruschetta with toppings, or it will become soggy.
  • Serve the bruschetta immediately after it is made.
  • Bruschetta is a great appetizer or snack, and it can also be served as a light meal.

Conclusion:

Bruschetta is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to use up leftover bread and tomatoes, and it can also be made with a variety of other ingredients. Whether you are serving it as an appetizer, snack, or light meal, bruschetta is sure to be a hit.
