When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

This recipe was modified from one I found in a cookbook published by "The Turkey Store". My family, and everyone I have ever served it too love it and can't believe that it is low fat, low cholesterol. And recently I started substituting oatmeal for bread crumbs since my husband's doctor put him on an even stricter diet than before. It is easy, there is no need to sauté the onions, bell pepper and garlic before mixing with the rest of the ingredients. It is also moist and very tasty. I usually serve with baked sweet potatoes and fresh green beans. It makes GREAT sandwiches the next day.

1 lb ground turkey breast
1/2 cup fat free egg substitute or 2 eggs
1/4 cup bell pepper, finely diced
1/2 cup onion, chopped
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons bottled minced garlic or 6 garlic cloves, minced
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce, divided
1 teaspoon dried basil
1 cup tomato sauce
3/4 cup rolled oats, not instant oatmeal
cooking spray

Steps:

  • Spray 9 x 5 loaf pan with cooking spray.
  • Combine all ingredients except tomato sauce and 1 tbsp Worcestershire in large bowl and mix well.
  • Add more egg if too dry, or add more oatmeal crumbs if too wet.
  • Press turkey mixture into pan.
  • Bake at 375°F for 45 minutes.
  • Mix tomato sauce and remaining 1 tablespoon Worcestershire together in small bowl.
  • Remove meatloaf from oven and pour tomato sauce mixture over meatloaf.
  • Return to oven for an additional 15- 20 minutes.
  • If using 99% Fat Free ground turkey breast meat, there is no need to drain fat before pouring tomato sauce on and returning to oven.
  • If you use the regular ground turkey, which is about 7% fat you might want to drain the fat off before pouring the tomato sauce on the loaf.

1 egg, beaten

2 lbs hamburger (recommend hamburger with a bit of fat content or add some olive oil to a very very lean hamburger)
2 small finely chopped green onions
1/2 cup rolled oats
1 dash soy sauce
1 dash Worcestershire sauce
2 eggs
1 medium carrot
2 1/2 tablespoons yellow mustard
2 1/2 tablespoons brown sugar
2/3 cup ketchup

Steps:

  • Mix the first 7 ingredients in a bowl. Best to mix together with your fingers. Mix together last 3 ingredients for sauce in a separate small bowl.
  • Add mixture to a non-stick loaf pan
  • Make a small trough in the middle of the meatloaf to later allow the sauce to fill into.
  • Bake covered with tin foil in oven for 1 hour at 350 degrees. After 1 hour drain meatloaf of any juice.
  • Add sauce at this time, and cook for another 15 minutes uncovered.

I don't remember where I found this recipe, on the internet somewhere maybe, but, basically, it's not mine. Definitely not low fat/low carb, but it's the best and easiest meatloaf I've ever had. I make it all the time for my family and they love it. My brother in law always requests that I make two, so he has leftovers the next day. You can substitute a ground meat mixture, or ground turkey for the ground beef.

1/2 cup ketchup
0.5 (1 ounce) package dry hidden valley ranch dressing mix
1 cup prepared stuffing, Pepperidge farm blue bag, NOT CUBED
1 (6 ounce) can French-fried onions
1 1/2 lbs ground beef (approx)
ketchup, for topping- see below

Steps:

  • Preheat oven to 400°F.
  • Put meat, french fried onions, and stuffing in bowl. Mix eggs, ketchup, and ranch dressing together separately (easier this way), then dump over other ingredients (meat, stuffing, onions). Mix all together. Shape into loaf (or whatever shape you want) and put on a cookie sheet. (Helps to line cookie sheet with tin foil first- easier clean up). Cover loosely with tin foil and bake 50-60 minutes. Remove foil and top with ketchup, or any topping sauce you like, for the last ten minutes.
  • Let cool for at least 10 minutes before cutting.
  • **I just want to note that in most ovens, the bottom of this loaf burns. I don't know why, I've tried and tried to keep it from happening to no avail. However, it doesn't matter, I just cut burnt part off, doesn't effect the rest of the loaf. Also, I don't use a loaf pan for this one, because it will be too greasy.

2 lb wagyu beef
1 Tbsp fresh thyme
1 Tbsp garlic paste
1 Tbsp onion powder
1/2 Tbsp dried basil
1 Tbsp rustic seasoning
1/2 tsp cayenne pepper (powder)
1 pinch sea salt
2 pinch cracked black pepper
6 dash(es) liquid hickory smoke
1 1/2 roasted red pepper
15 garlic butter ritz crackers (crushed)
1 1/2 Tbsp beef broth
2 eggs
1 1/2 c fresh chopped parsley
1 green onion (chopped)
4 slice fresh mozzarella
4 ciabatta bun
4 crispy onion straws (preference amount!)
4 tsp favorite bbq sauce

Steps:

  • 1. Preheat oven to 425*. Combine EVERYTHING except the bread, BBQ sauce, cheese, and onion straws in a large bowl.
  • 2. Mix well, but take care not to OVER mix! It is a "loaf" afterall!
  • 3. In a loaf pan that has been sprayed with non stick or spray olive oil, spread the meat mixture evenly. Top the loaf with your favorite BBQ sauce in an even but substantial layer. Cover with foil and bake for 430 mins- remove foil and bake for another 15-20 mins. The top should have nice caramelization.
  • 4. Remove the meatloaf from the oven and recover with foil. Allow to rest. Meanwhile, toast your ciabatta buns! I do this with the layer of fresh mozzarella on the bottom bun, until nice and melty and the bread is crispy!
  • 5. Assemble! Slice the loaf into desired slices for sandos. Lay slice on top of cheese. Add more BBQ sauce as desired, top with crispy onions, AND E N J O Y the comfort in your mouth!

2 pounds ground beef
1 can (10 3/4 ounces) Campbell's® Condensed Tomato Soup (Regular or Healthy Request®)
1 envelope (about 1 ounce) dry onion soup and recipe mix
1/2 cup plain dry bread crumbs
1 egg, beaten
1/4 cup water

Steps:

  • Thoroughly mix the beef, 1/2 cup tomato soup, onion soup mix, bread crumbs and egg in a large bowl. Place the mixture into a 13 x 9 x 2-inch baking pan and firmly shape into an 8 x 4-inch loaf. Bake at 350 degrees F. for 1 hour 15 minutes or until the meatloaf is cooked through. Let the meatloaf stand for 10 minutes before slicing. Heat 2 tablespoons pan drippings, remaining tomato soup and water in a 1-quart saucepan over medium heat until the mixture is hot and bubbling, stirring occasionally. Serve the soup mixture with the meatloaf.
