1 can (10-1/2 ounces) condensed beef broth, undiluted
3/4 cup uncooked long grain rice
1 jar (4-1/2 ounces) sliced mushrooms, drained
1/4 cup butter, melted
1/2 teaspoon garlic powder
1/2 teaspoon onion salt

Steps:

  • In a 2-qt. microwave-safe dish, combine all ingredients. Cover and microwave on high for 4 minutes. Microwave at 50% power for 12 minutes. Let stand for 5-10 minutes. Stir before serving.

1 small onion, finely chopped
1 celery rib, chopped
1/2 cup chopped celery leaves
2 tablespoons butter
1 pound sliced fresh mushrooms
3 cups uncooked instant rice
3 cups water
4 teaspoons Greek seasoning
1/2 cup chopped pecans, toasted

Steps:

  • In a large nonstick skillet coated with cooking spray, saute the onion, celery and celery leaves in butter for 4 minutes. Add mushrooms; cook 4 minutes longer., Add rice; cook for 4-5 minutes or until lightly browned. Stir in the water and Greek seasoning. Bring to a boil. Remove from the heat; cover and let stand for 5 minutes. Fluff with a fork. Sprinkle with pecans.

1 (10.5 ounce) can condensed French onion soup
1 (10.5 ounce) can beef broth
1 (4 ounce) can sliced mushrooms, drained
¼ cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine rice, onion soup, beef broth, mushrooms and butter in an 8x8 inch casserole dish.
  • Cover, and bake in the preheated oven for 60 minutes.

2 - 3 tbsp olive oil (, separated)
30g / 2 tbsp butter
750g / 1.5 lb mushrooms (, sliced 3 - 5 mm / 1/8 - 1/5" thick (Note 1))
2 garlic cloves (, minced)
1 small onion (, finely diced)
1 1/2 cups long grain rice, uncooked ((Note 2))
2 1/4 cups vegetable stock / broth ((or chicken) (Note 3))
1 1/2 - 2 cups green onions (, sliced)
Optional: More butter to stir through

Steps:

  • Heat 2 tbsp oil in a large pot over high heat. Add half the mushrooms, and cook for 5 minutes until golden. Season with salt and pepper then remove and set aside (we put these in at the end, mushrooms cooked in rice don't stay as golden).
  • If the pot is dry, another 1/2 - 1 tbsp oil, and add butter. When melted, add onions and garlic.
  • Cook for 30 seconds, then add remaining mushrooms. Cook for 5 minutes or until mushrooms are lightly browned (they won't caramelise as well as the first batch) and the base of the pot is brown.
  • Add rice and a splash of broth. Mix so the brown stuff on the bottom of the pot mixes into the liquid. (Video below helpful here)
  • Once the base of the pot is clean, add remaining liquid. Place lid on, bring to a simmer then turn down to medium low.
  • Cook for 15 minutes or until there is no residual liquid (tilt pot to check).
  • Remove from stove, remove lid, QUICKLY toss in reserved mushrooms and scallions, put lid back on. Leave for 10 minutes (do not skip this step!).
  • Fluff rice using a fork or wooden spoon. OPTIONAL: Stir through more butter. :) Serve!

1 tablespoon olive oil
1 tablespoon butter
1 tablespoon chopped shallot
1 cup sliced mushrooms
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup medium grain rice (any rice would do)
1/4 cup white wine
3/4 cup chicken broth

Steps:

  • Heat olive oil and butter in 8" skillet over medium-high heat.
  • Add shallots, sauteing for 1 minute.
  • Add mushrooms, sauteing for about 2 minutes.
