1 lb boneless skinless chicken breasts, cut into thin strips
1 1/2 teaspoons ground cumin
1 medium onion, cut into thin wedges
1 medium green bell pepper, cut into thin strips
1 package (11 oz) Old El Paso™ flour tortillas for burritos (8 tortillas; 8 inch), heated as directed on package
1 cup shredded Monterey Jack cheese (4 oz)
Old El Paso™ Thick 'n Chunky salsa, if desired
Sour cream, if desired

Steps:

  • In medium bowl, stir together corn, tomato, red pepper and salt; set aside.
  • In 12-inch nonstick skillet, heat oil over medium-high heat. Add chicken; sprinkle with cumin. Add onion; cook 5 minutes, stirring frequently.
  • Add bell pepper; cook 5 to 7 minutes, stirring frequently, until chicken is no longer pink in center and bell pepper is crisp-tender.
  • To assemble each wrap, spoon 3/4 cup chicken mixture down center of warm tortilla. Top with 1/4 cup corn mixture; sprinkle with 2 tablespoons cheese. Fold 2 sides of tortilla toward center; secure with toothpick. Serve with salsa and sour cream.

2 red bell peppers, sliced 2 zucchini, sliced
1 yellow onion, sliced
1 tablespoon olive oil
1 tablespoon fajita seasoning blend (no added sodium)
1/2 teaspoon salt
2 medium roasted sweet potatoes, diced
3 cups greens of choice, such as spring mix
Serving suggestions: avocado, cheese, cilantro, lime juice and sour cream, optional

Steps:

  • Preheat the oven to 425 degrees F.

1/2 cup(s) olive oil, extra virgin
1/4 cup(s) red wine vinegar
1 teaspoon(s) lawry's seasoned salt
1/2 teaspoon(s) black pepper
1/2 teaspoon(s) garlic powder [not garlic salt]
1/2 teaspoon(s) basil, dried
1/2 teaspoon(s) onion powder
6 - chicken breast halves, skinless and boneless
4 - onions, sweet or purple are best

Steps:

  • Place olive oil and vinegar in bowl or casserole dish. wire whisk until blended. Add remaining spices. Blend. Place chicken breast in marinade and cover. put in refrigerator for several hours or overnight [for best flavor]
  • Remove about a cup of marinade from dish before grilling and set aside. You will use 1/2 of this for onions and 1/2 for chicken. Slice up 4 onions into quarters then slices DO NOT dice and place in frying pan with 1/2 cup of marinade mixture. cook until tender and almost clear and brown.
  • Place chicken on grill and drizzle by tablespoons 1/2 of the marinade mixture. Grill until firm and cooked thoroughly. take off grill and carefully slice lengthwise into strips and serve warm with tortillas, onions, lettace, salsa and whatever else you like with your fajitas

3 garlic cloves, minced
2 teaspoons dried oregano

2 small yellow summer squash, julienned

I LOVE fajitas, but restaurants seem to , well, kinda rip you off on the meat part! LOL! Seems there are an AWFUL lot of peppers and onion...PLUS, gosh, why is everything SO expensive? So much better to make them yourself! This is my "concoction", I love them with Spanish Rice (Zatarain's), and any kind of dip/salsa and chips! Make them at home and your house will smell so good the neighbors will be knocking at your door! *You can easily make a half a batch, too.

4 lbs boneless skinless chicken breasts, cut into good-sized strips
1 green bell pepper, julienned
1 yellow bell pepper, julienned
1 red bell pepper, julienned
1 onion, cut into small wedges
1 cup extra virgin olive oil
1/2 cup lime juice, fresh or concentrate
2/3 cup unsweetened pineapple juice
2 teaspoons paprika
1 tablespoon cumin

Steps:
