1 (12 ounce) package egg noodles
4 ¼ teaspoons kosher salt, divided
4 tablespoons salted butter, divided
5 teaspoons olive oil, divided
1 (8 ounce) package sliced fresh mushrooms
1 small white onion, minced
¼ cup all-purpose flour
2 cups milk
1 ½ cups chicken stock
2 tablespoons lemon juice
1 teaspoon Dijon mustard
½ teaspoon ground black pepper
1 ½ cups shredded white Cheddar cheese
1 cup frozen sweet peas
2 (6 ounce) cans tuna, drained
1 cup panko bread crumbs
¼ teaspoon ground paprika
2 tablespoons finely chopped fresh parsley

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.

This is a recipe my entire family loves! It's requested at least once a week and for Birthday suppers. The recipe came from the mother of one of my childhood friends, who made some of the best food. If I'm making a double batch, I make it with cream of chicken and celery soups together.

10 1/2 ounces cream of chicken soup
1/2 cup mayonnaise
1/4 cup milk
1/2 cup diced yellow onion
1/2 cup diced celery
6 ounces albacore tuna
6 ounces cooked egg noodles
1/4 cup shredded cheddar cheese
salt and pepper

Steps:

  • Mix the cream of chicken, mayonnaise and milk together in a large bowl.
  • Add the diced celery and onion.
  • Fold in the tuna, followed by the cooked egg noodles and shredded cheddar cheese.
  • Salt and pepper to your taste.

8 oz. no-yolk type medium noodles
2 tsp. butter or margarine divided
1 small chopped onion
1/2 medium chopped onion
1 c. sliced fresh mushrooms
2 tbsp. flour
1 1/4 c. 1 percent milk
1/2 c. shredded sharp cheddar cheese
1 (9 oz.) can drained water-packed albacore tuna
1/2 tsp. each salt and black pepper
1/3 c. dried bread crumbs

Steps:

  • Heat oven to 350 degrees. Coat 2 quart baking dish with cooking spray set aside. Cook noodles according to package directions; drain. Meanwhile combine 1 teaspoon butter or margarine, bell pepper, onion and mushrooms in a large container and microwave on high; drain. Whisk together flour and milk until smooth. Stir into vegetable mixture; cover and microwave on high 2 minutes. Stir; recover and cook 1 minute. Stir and continue cooking in 30 seconds increments until thickened. Remove from microwave and cheese and stir until melted. Stir in tuna, cooked noodles, salt and pepper and spoon into baking dish. Bake covered 25 minutes. Mix together bread crumbs and the 1 teaspoon remaining butter (melted) sprinkle over casserole and bake 5 more minutes or until bubbly.
