CHILI CON CARNE
This recipe came from my Pillsbury Cookbook. This has been my favorite way to eat chili since 1995. The recipe listed here includes my modifications. When in season, I have substituted the green chilis with a habenero and another time with a habenero plus 2 tabasco peppers. Both of these, especially the latter, made it a HOT chili.

Tips:
- Choose the right type of chili powder: There are many different types of chili powder available, so it's important to choose one that will give you the flavor you want. For a classic chili con carne, use a mild or medium chili powder. If you want a spicier chili, use a hot chili powder.
- Use fresh, high-quality ingredients: The fresher your ingredients, the better your chili will taste. When possible, use fresh vegetables, meat, and spices. Avoid using canned or frozen ingredients, as they can be lower in quality and flavor.
- Brown the meat well: Browning the meat is an important step in making chili con carne. It helps to develop the flavor of the meat and gives the chili a richer color. Be sure to brown the meat in a large pot or Dutch oven over medium-high heat. Don't overcrowd the pot, or the meat will steam instead of brown.
- Simmer the chili for at least 30 minutes: Simmering the chili allows the flavors to develop and meld together. The longer you simmer the chili, the better it will taste. If you're short on time, you can simmer the chili for a shorter period of time, but it won't be as flavorful.
- Season the chili to taste: Once the chili is finished simmering, taste it and adjust the seasonings as needed. You may need to add more chili powder, cumin, salt, or pepper. You can also add a bit of sugar or honey to balance out the flavors.
Conclusion:
Chili con carne is a delicious and versatile dish that can be enjoyed by people of all ages. It's a great meal to serve on a cold day, or to bring to a potluck or party. With a few simple tips, you can make a chili con carne that is sure to please everyone. So next time you're looking for a hearty and flavorful meal, give chili con carne a try.
