BEST-EVER BARBECUED RIBS

Yield Makes 8 servings

Number Of Ingredients 8

2 1/2 tablespoons kosher salt
1 tablespoon dry mustard
1 tablespoon paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon freshly ground black pepper
8 pounds baby back pork ribs (8 racks) or St. Louis-style spareribs (4 racks)
Low-salt chicken broth (optional)
1 1/2 cups store-bought or homemade barbecue sauce plus more

Steps:

  • Preheat oven to 350°F. Combine first 5 ingredients in a small bowl. Place each rack of ribs on a double layer of foil; sprinkle rub all over ribs. Wrap racks individually and divide between 2 baking sheets.
  • Bake ribs until very tender but not falling apart, about 2 hours for baby backs and 3 hours for spareribs. Carefully unwrap ribs; pour any juices from foil into a 4-cup heatproof measuring cup; reserve juices. Let ribs cool completely. DO AHEAD: Ribs can be baked up to 3 days ahead (the flavor will be more developed, and the cold ribs will hold together better on the grill as they heat through). Cover and chill juices. Rewrap ribs in foil and chill.
  • Build a medium-hot fire in a charcoal grill, or heat a gas grill to high. Add broth or water to rib juices, if needed, to measure 1 1/2 cups. Whisk in barbecue sauce to blend.
  • Grill ribs, basting with barbecue sauce mixture and turning frequently, until lacquered and charred in places and heated through, 7-10 minutes. Transfer to a cutting board; cut between ribs to separate. Transfer to a platter and serve with additional barbecue sauce.

HOMEMADE SEITAN BARBECUE (BBQ) RIBS - VEGAN

Homemade Seitan Barbecue (Bbq) Ribs - Vegan image

This is an original recipe by Susan V from fatfreevegan.com. It's so easy to make and incredibly yummy! You can buy Vital Wheat Gluten at most grocery stores (look for Bob's Red Mill). I did not have nutritional yeast so I omitted this ingredient with no lack of taste. These were "grilled" on a griddle and it worked out great. My meat eater hubby loved it as did the kids. Check out http://everydaydish.tv/cookingshow_video.html for a video on how to make this. (it's under Susan's Ribz).

Time 40m

Yield 2-4 serving(s)

Number Of Ingredients 10

1 cup vital wheat gluten
2 teaspoons paprika (smoked Spanish)
2 tablespoons nutritional yeast
2 teaspoons onion powder
1 teaspoon garlic powder
3/4 cup water
2 tablespoons nut butter (peanut butter, tahini, cashew)
1 teaspoon liquid smoke
1 tablespoon soy sauce
1 cup barbecue sauce

Steps:

  • Preheat the oven to 350°F and lightly spray an 8x8-inch baking dish with canola oil.
  • Mix the first 5 ingredients together in a large bowl. Mix the water with the nut butter, Liquid Smoke, and soy sauce and add it to the dry ingredients. Stir to mix well in the bowl for a couple of minutes.
  • Put the dough into the baking dish and flatten it so that it evenly fills the pan. Take a sharp knife and cut it into 8 strips; then turn the pan and cut those strips in half to form 16 pieces.
  • Put it in the oven and bake for 25 minutes. While it's cooking prepare your grill pan or grill.
  • Remove it from the oven and carefully re-cut each strip, going over each cut to make sure that the ribz will pull apart easily later. Generously brush the top with barbecue sauce. Take it to the grill pan or grill and invert the whole baking dish onto the grill (or use a large spatula to lift the seitan out, placing it sauce-side down on the grill). Brush the top of the seitan with more sauce.
  • Watch it closely to make sure that it doesn't burn. When sufficiently brown on one side, turn over and cook the other side, adding more sauce, if necessary. When done, remove to a platter and cut or pull apart the individual ribs to serve.

Time 2h

Yield 4-6 serving(s)

Number Of Ingredients 14

1 1/2 cups dry rub seasonings (Citrus Roundup BBQ Rub)
1 (4 lb) rack pork spareribs, trimmed of excess fat
1/2 cup water
1 cup barbecue sauce (recommend Bullseye)
2 1/2 tablespoons lemon pepper
2 tablespoons seasoning salt
2 tablespoons paprika
1 tablespoon sugar
1 tablespoon brown sugar
1 tablespoon ground cumin
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
1/4 tablespoon cayenne pepper

Steps:

  • Combine all Citrus Roundup BBQ Rub ingredients in a medium bowl. Stir to combine.
  • Sprinkle Citrus BBQ Rub on both sides of ribs, rubbing the meat to adhere. Cover with plastic wrap. Refrigerate for 8 hours, or overnight.
  • Preheat oven to 350 degrees F. Place ribs in a roasting pan or on a baking sheet, and pour water into pan. Cover with foil and roast for 1 hour.
  • Remove the pan from oven and uncover. Pour off any excess water. Evenly coat top of ribs with barbecue sauce. Return pan to oven and roast for 30 minutes more.
  • Remove the pan from the oven and cover lightly with foil. Let ribs rest for 10 minutes.
  • Slice the ribs between each bone with a serrated knife. Serve immediately.

Tips:

  • Choose high-quality pork ribs for the best results. Look for ribs that are meaty and have a good amount of marbling.
  • Be sure to remove the membrane from the back of the ribs before cooking. This will help the ribs to cook evenly and will make them more tender.
  • Season the ribs generously with your favorite spices and rubs. This will help to create a flavorful crust on the ribs.
  • Cook the ribs over indirect heat for several hours. This will allow the ribs to cook slowly and evenly.
  • Baste the ribs with your favorite barbecue sauce during the last hour of cooking. This will help to keep the ribs moist and will add even more flavor.
  • Let the ribs rest for a few minutes before serving. This will allow the juices to redistribute throughout the ribs, making them even more tender and flavorful.

Conclusion:

Big Thunder BBQ Ribs are a delicious and easy-to-make dish that is perfect for any occasion. With just a few simple ingredients and a little bit of time, you can create a mouthwatering rack of ribs that will impress your friends and family. So what are you waiting for?
