We made this every year when I was growing up. I couldn't wait for it to mellow for a few hours; I would just dig in right away. My daughter says she has frozen this with good results. It makes a big batch.

Big Mom's Cranberry Salad: Time-Saving Recipe, Ingredient Substitutions, and Pro Cooking Techniques

Time-Saving Recipe:
  • Use store-bought orange zest instead of zesting an entire orange. Look in the spice aisle or the section where the other extracts and flavors are located.
  • Buy pre-chopped walnuts or pecans to avoid the additional task of chopping. Look at the section with other pre-chopped ingredients, such as bacon and deli items.
  • Use a bag of cranberries instead of fresh cranberries. You can also use a tub of jellied cranberry and chop about one cup.
  • Ingredient Substitutions:
  • Lemon: If you don't have a fresh orange on hand, use a tablespoon of bottled orange zest or the zest from a whole, fresh orange. Lemon zest can also be substituted for orange zest, but the orange is the standard.
  • Walnuts: If you don't have walnuts, feel free to use pecans.
  • Pineapple: If you don't have fresh pineapple, you can use a cup of drained, canned pineapple or a cup of ready-to-eat pineapple. Be sure to cut the canned product in pieces similar to the fresh pineapple.
  • Cherries: If you don't have whole, canned cherries, use maraschino cherries. Be sure to avoid dyes by getting a white or pastel-colored cherry. You might also try ginger-flavored cherries.
  • Cream Cheese: If you don't have cream cheese, use Neufchâtel cheese, or a similar soft cheese, such as Boursin.
  • Pro Cooking Techniques:
  • To make this recipe easier to eat for children and older people, consider dicing the celery so that it is smaller than the other ingredients.
  • Chill the serving bowl for 30 minutes before making the recipe, so that the mixture will be chilled when you serve it.
  • Drain the maraschino cherries and rinse them with cool water to remove the red or green dyes and reduce the sugar. This will give you a more pastel-colored, white, or clear cherry.
  • The original recipe says that you can add a cup of fresh orange sections or pineapple. However, you should always add at least one of the two to ensure a sweet, tangy balance for this five-cup recipe.
  • Conclusion: A Crowd-Pleasing Cranberry Salad for Every Occasion

Big Mom's cranberry recipe makes for a great dessert or side dish. It's a classic, easy-to-make recipe that everyone will love. This cranberry recipe is a good option for beginners, since the recipe is already relatively simple, but it's also a good recipe for advanced cooks who are looking for a quick and easy option for a side dish or dessert.
