4 tablespoons baking powder
1/4 teaspoon salt
3 sticks cold butter, cut into pieces
3 1/2 cups whole milk

1 teaspoon brown sugar
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon ground oregano
1 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon cayenne
1 skinless salmon fillet
1 tablespoon olive oil
1 limes or 1 lemon, cut into wedges

Steps:

  • Mix the Blackening spices (the first 8 ingredients) in a small bowl.
  • Place your salmon fillet on a plate. (I usually buy half a salmon filleted - cut it into portions and freeze it - using it up as I need it.) Pat it dry with a paper towel.
  • Sprinkle the Blackening Spice all over your salmon and gently rub it inches.
  • Pour olive oil into a heavy cast iron frying pan or other heavy bottomed frying pan and heat over medium heat.
  • Make sure your pan is nice and hot and gently place your fillet in the skillet. Watch out it may spatter!
  • Do not move the fillet! Cook it for 2 to 3 minutes until it is a nice dark color. You can peek under a corner to make sure it is.
  • Flip the fillet over and cook for an additional 2 to 3 minutes until cooked to your liking.
  • Serve immediately with Lime or Lemon wedges.
  • I like to serve mine on a bed of Garlic Mashed Potatoes. - Enjoy!
