IMPOSSIBLE GARDEN PIE

Impossible Garden Pie image

This recipe came from a Bisquick Cookbook. I love the flavor combination of the vegetables used and it is so easy to make. I substituted the Bisquick baking mix with the Master Mix (Homemade Bisquick Substitute) from RecipeZaar posted by Cindy Lynn recipe # 45055 substituting the powdered milk with powdered buttermilk and Safflower Oil for the shortening. I liked the homemade version much more than the store bought Bisquick.

REDUCED-FAT IMPOSSIBLY EASY VEGETABLE PIE

Reduced-Fat Impossibly Easy Vegetable Pie image

I took Bisquick's Impossibly Easy Vegetable Pie and bulked it up with extra veggies and lowered the fat by substituting fat-free milk and cheese and self-rising flour for the Bisquick. It is a completely delicious and low-cal vegetarian dish that would work for a savory breakfast, a brunch, lunch and I've even served it for dinner. You can substitute cauliflower for the broccoli or try half of each. I just love the broccoli too much to try anything else!

Tips:

  • Choose fresh vegetables: Using fresh, high-quality vegetables will ensure the best flavor and texture for your pie.
  • Don't overcook the vegetables: Overcooked vegetables will become mushy and lose their flavor. Cook them just until they are tender-crisp.
  • Use a good quality cheese: The cheese is one of the key ingredients in this pie, so it's important to use a good quality cheese that melts well. Cheddar, mozzarella, and Swiss are all good choices.
  • Don't overmix the dough: Overmixing the dough will make it tough. Mix it just until the ingredients are combined.
  • Bake the pie until the crust is golden brown and the filling is bubbly: This will ensure that the pie is cooked through.

Conclusion:

Bisquick Impossible Veggie Pie is a delicious and easy-to-make vegetarian dish that is perfect for a weeknight meal. With its flaky crust, creamy filling, and hearty vegetables, this pie is sure to be a hit with everyone at the table.
