1/3 cup Bisquick
1/3 cup brown sugar
1/2 teaspoon cinnamon
2 tablespoons butter or 2 tablespoons margarine (not melted)
2 cups Bisquick
2 tablespoons powdered milk
2 tablespoons sugar
2/3 cup water
1 egg

Steps:

  • Preheat oven to 375°F.
  • Mix streusel ingredients in a small bowl until crumbly.
  • Set aside (if your kitchen is hot, set it in the fridge).
  • Mix cake ingredients.
  • Pour batter into 9" greased cake pan.
  • Sprinkle streusel crumbs over the top of the cake.
  • Bake for 20-25 minutes.

This is a recipe from the makers of Bisquick. I made it as written but it was a little dry, and as you can see from my photo, it didn't have enough streusel topping! So I have re-written the recipe according to what other cooks said worked best!

CINNAMON STREUSEL TOPPING
2/3 c original bisquick mix
2/3 c packed brown sugar
1 tsp ground cinnamon
4 Tbsp firm butter
COFFEE CAKE
2 c original bisquick mix
2/3 c milk
3 Tbsp white sugar
1 large egg
1/2 c apple sauce

Steps:

  • 1. Heat oven to 375 degrees F. Grease 9-inch round pan. In small bowl, stir streusel ingredients until crumbly; set aside.
  • 2. In medium bowl, mix coffee cake ingredients until blended. Spread in pan. Sprinkle with streusel.
  • 3. Bake 18 to 22 minutes or until golden brown.
  • 4. I added powdered sugar to mine, just as a garnish.

Tips:

  • For a streusel topping that is extra crispy, use cold butter and flour. You can also chill the streusel mixture before sprinkling it on the cake batter.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • To ensure that the cake is cooked through, insert a toothpick into the center. If it comes out clean, the cake is done.
  • This cake can be served warm or at room temperature. It is also delicious the next day.
