1 tablespoon chopped fresh parsley

Steps:

  • In a Dutch oven or soup kettle, saute the pepper and onions in butter or margarine until tender.

½ green bell pepper, cut into 2 inch pieces

1 egg

½ cup bread crumbs

Steps:

  • If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.
  • In a medium bowl, mash black beans with a fork until thick and pasty.
  • In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.

1 tablespoon olive oil
1 cup red onion, diced
1 1/2 tablespoons garlic, minced

1 cup red pepper, diced
1 (6 ounce) ham steaks, trimmed and diced
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon thyme
1/2 teaspoon oregano
4 cups water
3 envelopes oxo low-sodium instant chicken bouillon granules (makes 2.25 c bouillon)
1 cup old el peso chunky salsa
1 ounce cheddar cheese, shredded
1/2 cup low-fat sour cream

Steps:

  • Soak the black beans for several hours or overnight.
  • Saute red onion, garlic, celery, and red pepper in olive oil until tender.
  • Add ham, cumin, coriander, thyme, and oregano to vegetables and cook for 1 minute.

1 can (15 ounces) black beans, rinsed and drained

Steps:

  • Melt margarine in 4-quart Dutch oven over medium heat. Cook onion in margarine, stirring occasionally, until crisp-tender.

1 lb dry white bean, Great. Northern
2 lbs ham hocks or 2 cups ham, chopped
1 cup onion, chopped
1 cup carrot, chopped
1/2 green pepper, chopped
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/2 teaspoon mace
1 quart tomatoes, canned

Steps:

  • Soak beans overnight in water to cover by 2 inches.
  • Drain beans.
  • Add water to cover beans by 1 inch.
  • Cook beans with ham hocks (I use a ham bone with some meat) for at least 2 hours on low heat. Remove ham bone from beans and let cool.
  • Add all other ingredients.
  • Remove ham from the bone and return ham to the bean mixture. Cook until vegetables are tender, about 30 minutes to 1 hour.
  • Freezes well.
  • Note: I submitted this to a family cookbook and it is the recipe that "everyone" loves.

3 quarts water

6 slices bacon
⅛ cup all-purpose flour
2 onions, chopped
2 stalks celery, chopped
½ tablespoon sesame oil
2 carrots, chopped
5 cloves garlic, minced

¼ teaspoon ground cayenne pepper
