4 tablespoons unsalted butter
Kosher salt
1/2 onion, diced
3 stalks celery, diced
2 large plum tomatoes, diced
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 tablespoon Cajun seasoning
3/4 cup dry white wine
2 pounds mussels, scrubbed and debearded
Chopped fresh parsley, for topping

Steps:

  • Combine the rice, 1 tablespoon butter, 1/4 teaspoon salt and 2 cups water in a saucepan. Bring to a boil, stirring occasionally. Reduce the heat to low, cover and cook until the rice is tender, about 15 minutes. Remove from the heat and set aside.
  • Meanwhile, melt 2 tablespoons butter in a large pot over medium-high heat. Add the onion and celery, season with salt and cook until just tender, about 8 minutes. Add the tomatoes, garlic, Worcestershire sauce and Cajun seasoning; cook until the tomatoes start breaking down, about 2 minutes. Add the wine and cook until reduced by half, about 4 minutes. Add 1 cup water and the mussels and season with salt. Cover and cook until the mussels open, 4 to 5 minutes (discard any unopened mussels). Remove from the heat and stir in the remaining 1 tablespoon butter; season with salt.
  • Fluff the rice with a fork and divide among bowls. Top with the mussels and broth; sprinkle with parsley.

1 cup white rice
2 tablespoons olive oil
1 cup finely chopped leeks or 1 cup onion
2 minced garlic cloves
1 teaspoon fennel seed
1/2 teaspoon salt
1/2 cup white wine
1 (28 ounce) can diced tomatoes (drained)
1 (28 ounce) can tomato sauce
1 pinch crushed red pepper flakes
2 lbs mussels, beards removed
1 lb shrimp, peeled and deveined
4 tablespoons chopped flat leaf parsley

Steps:

  • Combine the rice with equal amounts water and cook according to directions on package set aside.
  • Heat the oil in a large pot over medium heat. Add the leeks or onions and cook until tender (about 5 minutes). Add garlic and fennel seeds and continue cooking for another minute. Add the wine and cook over high heat until about half has been absorbed. Stir in tomatoes, salt and red pepper.

2 pounds Prince Edward Island Mussels, cleaned and prepped
1 tablespoon minced garlic
1 tablespoon minced ginger
4 fresh serrano chilies or fresh Thai bird chilies, de-stemmed, minced with seeds
1 tablespoon fermented Chinese black beans
1/2 cup white wine
2 tomatoes or 4 canned tomatoes, diced
1 tablespoon 3 Crab fish sauce
2 cups chicken stock
8 ounces rice stick noodle, soaked in warm water until al dente
1 bunch picked Thai basil
1 bunch chives
2 ounces butter (optional)
2 limes cut in half

2 tablespoons olive oil
1 onion, chopped
3 garlic cloves, chopped
250 g rice (Arborio or rice for risotto)
1/2 cup red wine
700 ml fish stock, from 1 cube, hot
350 g mussels, frozen
350 g shrimp, frozen
400 g of whole squid, thawed, cut into rings
1/3 cup canned tomato, chopped
50 g butter, cut into small pieces
1/3 cup grana padano or 1/3 cup parmesan cheese, grated
1/4 teaspoon ground black pepper

Steps:

  • Sauté onion and garlic in olive oil for 2-3 minutes over moderately low heat, stirring occasionally. Add the rice and toast lightly for 1-2 minutes without letting the rice or onion take on any color.
  • Add the wine and cook until almost completely absorbed. Add most of the hot fish stock (it should come about ½ inch above the rice) and bring to a simmer. Cook the risotto, stirring occasionally, until the rice has absorbed some of the liquid, about 8 minutes.

1 lb 5 oz fresh squid, cleaned
8 cups fish stock
1/3 cup olive oil
1/2 cup sofrito
3 cups paella rice
3/4 oz squid ink (optional)
2 tbsp picada

Steps:

  • If the squid has tentacles, pull them away from the body. Cut the squid into 1-inch strips. Then cut into 1-inch cubes. Pour the fish stock into a saucepan, cover, and bring to a simmer. Put a large pan over high heat and add the oil. Add the squid. Fry for 2 minutes, until golden in places. Add the sofrito and continue to cook over medium heat for 10 minutes. Add a teaspoon of water if the sofrito starts to stick to the bottom of the pan. Add the rice, stirring it into the squid. Fry for 10 minutes, stirring often. Turn the heat to high and add a ladle of stock, stirring continuously. Once the stock has been absorbed, add another ladle and repeat until 5 minutes have passed. Dissolve the squid ink in a little of the remaining stock. Add this to the rice, and then continue adding the rest of the stock. Cook the rice for another 12 minutes, stirring frequently. Add the picada and continue to cook for another 2 minutes, or until the rice has absorbed most of the liquid and is just tender to the bite. Season with salt, then serve.
