1 lb catfish fillet
2 tablespoons olive oil
1 tablespoon garlic powder
1 tablespoon onion powder
1/2 teaspoon salt
1 teaspoon white pepper
1 teaspoon black pepper
1 teaspoon cayenne pepper
2 teaspoons thyme
1 teaspoon paprika
1 teaspoon oregano

Steps:

  • Place the fish fillets in a large bowl and drizzle olive oil over them, let stand for 30 minutes.

3 tablespoons Chef Paul Prudhomme's Blackened Redfish Magic (or substitute)
1 tablespoon sweet paprika
2 1/4 teaspoons salt
1 teaspoon onion powder
1 teaspoon garlic powder

3/4 teaspoon black pepper

Heat a large cast-iron skillet over very high heat until it is beyond the smoking stage and you see white ash in the skillet bottom, at least for 10 minutes.
