SPICY BUFFALO ONION RINGS AND BLUE CHEESE DIP
Steps:
- Fill a large heavy saucepan with 2 to 3 inches of cooking oil and heat over medium-high heat. The oil temperature should be at 350 degrees F when you start frying.
- In a large bowl, mix the eggs and milk; then add the flour and baking powder and mix thoroughly with a hand-held mixer. Strain the mixture to remove any lumps. Add more milk if you want a thinner crust. In a small bowl, mix the Cajun spice mix, cayenne pepper, white pepper, black pepper, dry mustard, and salt. Add this spice mixture to the batter. Cut the onions into thick slabs, dunk them in the batter, and fry them, in batches, in the oil until golden brown. Serve the onion rings with the Blue Cheese Dip, sliced carrot, and celery.
- In a large bowl, mix all the ingredients together. Season with salt and pepper, to taste. Serve the sauce in a side bowl for dipping.

SIMPLE BLUE CHEESE DIP FOR THE BLUE CHEESE LOVER
My grandmom used to serve this tangy yummy dip with celery. It makes a huge difference to use a high quality, strong blue cheese - if you use the cheap supermarket stuff this can be on the mild (I'd say bland) side. I like to use the strongest Spanish blue I can find. If you let it sit a couple of days in the fridge the blue flavor will intensify; you can also get stronger flavor by increasing the ratio of blue cheese to cottage cheese. Good with crackers or crudites; my husband uses it as a sandwich spread (try making one with turkey and tart apple slices); my toddler loves it straight out of a bowl (ever notice there's an "odd" in toddler?). You can use lower fat versions of the cottage cheese or milk without compromising taste, I think.

Steps:
- Remove rind from the cheese.
- In a medium size deep bowl (I use a 4 cup pyrex measuring cup) break the cheese into pieces.
- Add milk and cottage cheese.
- Blend with a hand blender until smooth (you can blend in a real blender too, but it's more annoying and harder to clean up).
- If consistency is too dense, add more milk and blend again.
- If it's too runny, add more cheese- the proportions are not rigid.
Tips:
- Use a good quality blue cheese. A sharp, flavorful blue cheese will give the dip the best flavor.
- Let the dip chill for at least 30 minutes before serving. This will allow the flavors to meld and develop.
- Serve the dip with a variety of dippers, such as celery, carrots, crackers, or bread.
- If you like a spicier dip, add a pinch of cayenne pepper or hot sauce.
- If you don't have sour cream, you can use Greek yogurt instead.
- If you want a smoother dip, blend it in a food processor until smooth.
Conclusion:
Blue cheese dip with onion and celery is a classic party appetizer that is easy to make and always a crowd-pleaser. With its creamy, tangy flavor and crunchy vegetables, this dip is sure to be a hit at your next gathering.
