HEAVENLY MEATLOAF WITH BLUE CHEESE, MUSHROOMS, AND SPINACH

Heavenly Meatloaf with Blue Cheese, Mushrooms, and Spinach image

A slightly different recipe using a combination of ingredients, this meatloaf tastes absolutely divine! Instead of the usual ketchup, tomato paste, and brown sugar, this meatloaf is more of an 'upscale' version of the traditional. Best served with mashed potatoes and asparagus. This is my own personal creation! I substitute ground deer meat occasionally instead of beef, only because I have a freezer full, and it's organic!

Tips:

  • For the best flavor, use a combination of ground beef and ground pork. Alternatively, ground turkey can be substituted for a leaner option.
  • To ensure a moist and tender meatloaf, do not overmix the ingredients. Mix just until combined.
  • Grate the potatoes finely to prevent them from becoming too chunky in the meatloaf.
  • Use a generous amount of blue cheese crumbles for a bold and flavorful meatloaf.
  • To prevent the meatloaf from becoming dry, baste it with the pan drippings during the last 15 minutes of baking.
  • Allow the meatloaf to rest for 10-15 minutes before slicing and serving. This will help the juices redistribute and prevent the meatloaf from falling apart.

Blue cheese potato meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight dinner. The combination of ground beef, potatoes, blue cheese, and spices creates a moist and flavorful meatloaf that is sure to please everyone at the table.
