MUSHROOM OMELETTE
The measurements for this recipe are guesstimates as I don't generally *measure* when I'm cooking, so it may be necessary to add more or less for personal preference. I also only used enough dried green pepper for one omelette, as my dad can't eat them!! So if it is desired for both, the amount will have to be increased. (If you can't find dried, chopped regular would also work fine, but might be easier to mix with mushrooms).

I like my fillings, aside from the cheese, mixed in the egg part of the omelet rather than sliding about, so this uses that technique. The result is more of a folded frittata than a classic omelet, but it's very tasty. This variation on fillings is hearty and flavorful.

MUSHROOM-AND-MICROGREEN OMELET

Tips:
- Choose Fresh Blue Mushrooms: Opt for firm, plump, and dry mushrooms with a vibrant blue-ish purple color. Avoid any slimy or discolored ones.
- Clean Mushrooms Gently: Wipe the mushrooms with a damp cloth or brush to remove dirt and debris. Avoid rinsing them under running water, as they tend to absorb moisture easily.
- Use Good Quality Butter: Butter adds a rich flavor to the omelet. Use unsalted butter to control the saltiness of the dish.
- Don't Overcrowd the Pan: Cook the mushrooms in batches if necessary to prevent overcrowding. This ensures even cooking and prevents steaming.
- Season Wisely: Add salt and pepper to taste. Remember that blue mushrooms have a slightly salty flavor, so adjust the seasoning accordingly.
- Cook Until Golden Brown: Cook the mushrooms until they are golden brown and tender. This brings out their earthy flavor and aroma.
- Use Fresh Herbs: Fresh herbs like thyme, chives, or parsley add a pop of color and freshness to the omelet.
- Fold Carefully: When folding the omelet, do so gently to prevent tearing. This helps keep the omelet intact and visually appealing.
