1 lb whole chicken
1 quart water
1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cups peanut oil

Steps:

  • cut chicken into 8 pieces.
  • wash throughly and remove excess fat.
  • cover chicken in a bowl with the quart of water and allow to sit or 3-4 minutes.
  • mix the flour, salt and pepper.
  • remove chicken from water, shaking off excess water but leaving it moist.
  • dredge the chicken pieces in flour mixture.
  • in a large deep heavy skillet, heat oil
  • place chicken in oil and cook uncovered 6 minutes on each side.
  • when golden brown remove from oil and drain on paper towels.

3 tablespoons nonfat milk
2 large egg whites
1/3 cup all-purpose flour
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
4 (4 ounce) sirloin cube steaks
2 teaspoons vegetable oil
2 cups mushrooms, quartered
2 1/2 tablespoons all-purpose flour
1/4 teaspoon salt
1 (14 ounce) can reduced-sodium fat-free beef broth

Steps:

  • Combine 3 tablespoons milk and egg whites in a shallow dish, stirring with a whisk. Combine 1/3 cup flour and next 4 ingredients (1/3 cup flour through pepper) in a shallow dish. Working with 1 steak at a time, dip in egg mixture then dredge in flour mixture. Repeat procedure with remaining steaks.
  • Heat oil in a large nonstick skillet over medium-high heat. Add steaks and cook 3 minutes on each side or until browned. Remove steaks from pan and keep warm.

4 tablespoons blue cheese
4 tablespoons butter, softened (not margarine)
1 teaspoon Dijon mustard
1/2 teaspoon Worcestershire sauce
1 small garlic cloves, minced or 1/8 teaspoon garlic powder
4 rib eye steaks

Steps:

  • Preheat grill for 5 minutes to medium-high. combine first 5 ingredients in small bowl. Spoon onto sheet of waxed paper. Shape into 4 inch long log. Wrap with waxed paper. Place in freezer until ready to serve.
  • Sprinkle both sides of steaks with pepper. cook on greased grill for 5 to 6 minutes per side until desired doneness. Transfer to large plate. Cover with foil. Let stand for 5 minutes.
